Chef Jerry's Recipe

   

Cucumber, Mango  

and Shrimp Salad

(4-6 servings)

 

Salad Dressing:

3 tablespoons Distilled White Vinegar

3 tablespoons Sugar

6 tablespoons Dijon Mustard

6 tablespoons Mayonnaise

 

Salad:

4 large Pickling Cucumbers, peeled, cut into 1/2-inch cubes (about 2 cups)

1 large Mango, peeled, pitted, cut into 1/2-inch cubes (about 1 1/2 cups)

1 pound Medium Cooked Shrimp

3 tablespoons  Fresh Dill, chopped

Hot Pepper Sauce

12 Bibb Lettuce Leaves

 

Method:

Mix white vinegar and sugar in small bowl until sugar dissolves. Whisk in Dijon mustard and mayonnaise. Cover and chill. (Can be made 1 day ahead. Keep chilled.)

Combine cucumbers, mango, shrimp, and dill in large bowl. Pour salad dressing over salad; toss to coat. Season with salt and hot pepper sauce. Arrange 2-3 lettuce leaves on each plate. Top with shrimp salad.

Fairfield Glade Match Play   

The FGCC annual Match Play Tournament was moved to the spring this year so it wouldn't conflict with our Club Championship in the fall. We thought for a while that the unpredictable weather was going to force us to play both events at the same time. 

The Match Play started the weekend of April 20th and 21st at Druid Hills, then Dorchester, with forty men and sixteen women entered.  To win your flight you had to survive four matches and two rain outs.  After enduring the non-cooperative weather, all the matches were finally settled on May 19th, nearly one month from the start.  This made the Match Play event one of the longest contested tournaments in recent years. 

 

The ladies division winner was Sandi Barth over Renee Guenther.

  

The men's division winners were; 1st Flight - Terry Levix over Mark Tullar, 2nd Flight - Larry Spahr over Norm Torrey, 3rd Flight - Elliot Kornreich over Tom Baker.  An interesting side bar is all three men's winners come from the New York area.  

Congratulations to all the winners, and we want to thank all the players for their patience and understanding as we worked through our weather issues.

Racquet Sports

 

What a start to the Racquet Center's outdoor season. We kicked off the season with our annual Bucky Cantrell Clay Court Classic. With competitors from all over the Southeast and many from right here in the Glade, the tournament was a huge success. Even though the rain turned the event into an indoor tournament, there were nothing but positive remarks about how our players were treated and how nice our facility is. In accordance with the Clay Court Classic, the Racquet Center, for the first time, also hosted the Pickleball Classic. Once again, it was well represented with players from all across Tennessee, and just like the Clay Court Classic, all the competitors were very pleased with our hospitality. A special thanks to all the volunteers who made these events possible.

 

We look forward to carrying this momentum through the remainder of the outdoor season with events throughout the summer.  Visit us on the web for the most up to date information on upcoming events. 

 

   

 


Fun at the Innovative Learning Center

The Arts & Crafts/Innovative Learning Center is in full swing.  This is the time of year when the kids are out of school and come to vacation or visit Fairfield Glade.  During the year, we have several thousand kids and adults come into the Arts & Crafts Center.  So, as you might imagine, we are a  pretty "happening place."

We are offering several new projects this year.  We are making a cement stepping stone and also a candle lit luminary crafted from a mason jar.  Later this summer, we are planning scrapbooking classes and, of course, our monthly painting class taught by one of our local artists.  This particular class requires NO artistic ability!

Marinas
Fish Fry is Back!!!   

 

The Fish Fry that was very popular several years ago at St. George Marina is back in business.  The pavilion has been extended to include restrooms and a full kitchen for serving our fish eating patrons.  The pavilion itself has a new coat of paint and a new roof.  The first Fish Fry of the season was held on Sunday, June 30th from 6 - 8 p.m., and will be scheduled every Sunday this Summer during those same hours.  The cost is $8 per plate and is cash only; however, the Marina building will accommodate credit cards if your wallet is empty.  The Marina will also be giving 30-minute boat rides for a nominal fee starting Sunday, July 7th during the Fish Fry event.  Come down and join your neighbors!!!

 

Watch for special activities planned at the marinas throughout the summer!

Food and Beverage

With Mother's Day, Father's Day and Memorial Day finishing up the spring season, we have rolled into summer with some exciting events including our Mirror Lake Blasts on Monday nights and the return of our Fish Fry on Sunday nights at the St. George Marina.  Each week we have many dining options at Legends, starting with the Sunday Breakfast Buffet.  Legends has a la carte dining each night except Sunday, and buffet specials like Chicken & Pasta on Wednesdays, the popular Prime Rib Special on Thursdays and Saturdays, and the Comfort Food Buffet on Fridays.   In July we will also offer three Community Appreciation Nights at Legends, as well as beer, wine and liquor tasting events to give you an opportunity to try something different at a low cost.

Stonehenge Grille is open daily from 11 am to 10 pm if you're looking for a sports bar atmosphere. On select Saturdays in July there will also be entertainment on the deck. We will be rolling out the new Stonehenge menu in July, so stop in and try some of the new updated choices.

 

The rain during 4th of July week didn't dampen our spirits, with a Breakfast Buffet on the 4th at Legends followed by the All American Buffet on Friday.  We held our Fish Fry at St. George on Sunday, and ended the week with Mirror Lake Blast on Monday, followed by the Fireworks!   

 

The food and beverage team is very proud to have won the "Best Overall" award at the Taste of Crossville for Legends! Fairfield Glade Couples Member-Guest Raises $2500 for American Cancer Society

The 29th annual Member-Guest Couples Invitational was held Friday, May 10th, and Saturday, May 11th, at Heatherhurst Golf Course. The event kicked off Thursday evening at the Fairfield Glade Community & Conference Center with drinks, food and fellowship. A silent auction was held for three pictures courtesy of Director of Golf, Steve Kraft; and tickets were sold for a 50/50 raffle with all the proceeds going to the American Cancer Society.  When all the bids were totaled and the money from the raffle counted, we ended up raising $2,500 for the American Cancer Society.

 

We would like to thank Food and Beverage Director, James Ivankovich, Chef Jerry, Kathryn Swicegood and the entire staff at the Community & Conference Center for a great meal and their hospitality. The tournament would not have been possible without the generous support of our sponsors, and we would like to recognize them one more time.

With cooperation from Mother Nature, the 31-team field was able to complete two days of competition with no suspension of play and very little rain. Friday's round was highlighted by a Hole in One on # 14 of the Crag by Bob Szalka. Not to be outdone, Lee Featherstone had an Ace of his own on Saturday on #13 of the Brae. Great shots by both guys; however, neither was a winner of the Closest to the Hole prize, as both were made on holes designated as Closest to the Hole for the Ladies. Speaking of Closest to the Hole, the winners for the weekend were as follows:

 

Closest to the Pin Friday: #3 Ginny Fox, #8 Ken Newman, #12 Jim Mann, #14 Patti Blakely

Closest to the Pin Saturday: #3 Jean Roise, #7 Mike Hayes, #13 Ken Rogers, #15 Ron Moe

 

As always Golf Course Superintendent, Mark Knaebel, and his staff had both the Crag and Brae in great shape for the weekend, no small feat with the almost 9 inches of rain the two weeks leading up to the event.

 

 Saturday afternoon after all the scores were tallied, the results were as follows:

A Fresh Look at Fairfield Glade

My first month at Fairfield Glade has included so many exciting and wonderful experiences.  One of my great discoveries has been that we have some of the nicest people living here and visiting Fairfield Glade.  In addition, we have exceptional people working tirelessly behind the scenes to ensure that our residents and guests are enjoying the wonderful lifestyle that Fairfield Glade has to offer. 

 

From the great music and smiling faces at Mirror Lake Blast on Monday nights, to the happy people enjoying our Fish Fry and pontoon boat rides on Sunday nights, there is truly something to do for every person visiting or living in the Glade.  I've made my way around three of the golf courses so far and still can't believe I have two more to explore.  Fairfield Glade has so much breathtaking natural beauty with the lakes, golf courses and long range vistas.

 

My hope was to experience as much as I could in my first month here, but I haven't been able to fit everything in because there is just so much to do. Fairfield Glade is a great place to live, play and work.  I'm delighted that I will have the opportunity to share the Fairfield Glade story with our future guests and residents.

 

Thank you to everyone for the warm welcome and providing the marketing team with such an amazing community to share with those people who have yet to discover Fairfield Glade.
