Fit To Recover would like to thank Ascend Recovery for their dedication and commitment to the recovery community. Ascend offers residential care, transitional living, and sober living. They have been a supporter of FTR from the beginning. We are forever grateful for their support.

NUTRITION PILLAR

SWEET POTATO ENCHILADAS


INGREDIENTS


5 cups Sweet Potato Mix

• Roasted sweet potato

• 2 cups black beans

• ¼ cup lime juice

• 1/2 bunch cilantro, chopped

• 2 tsp cumin

16 tortillas

2 cups shredded cheese

3 cups enchilada sauce (separated)


PREPARATION

1. Lay out your tortillas and divide the mashed up sweet potato mixture evenly between all tortillas (about 1/2 cup each). Sprinkle a little bit (about 2 Tbsp) of shredded cheddar in each tortilla as well. Gently fold the sides of the tortillas in toward the center, one side over the other, until they look like fat cigars.

2.Pour a little bit of enchilada sauce in the bottom of your baking dish. Place the rolled enchiladas in the baking dish, seam side down. Top the enchiladas with the rest of the sauce and the rest of the cheddar cheese.

3.Bake the enchiladas at 450 degrees for about 10 minutes. Enjoy!ze

COMMUNITY SERVICE PILLAR

October Service Opportunities:


Join us every Friday night at 9 PM at the SLC gym for community outreach.

We deliver sandwiches, water, and hygiene items we have available to our unsheltered friends. We always have need of water bottles, fresh bread, peanut butter & jam, granola bars, and personal hygiene items.

 Fit to Recover is an amazing place to be of service, fulfill service-hour requirements, or just to come connect and be of use in your community.


In 2022 we have had 120 hours of service donated at the gym!
