July is coming to a close, so stop by and pick up your favorite fruits and veggies while they’re still available! Orchard-fresh, juicy plums, plump and succulent blueberries, bountiful bunches of sweet corn, and deliciously ripe peppers and tomatoes are here. Pick them up while they’re still Jersey Fresh, and of course, don’t forget to bring your own bag!
CUCUMBERS - 5 FACTS: 
 
  1. Cucumbers are made up of 95% water but are also rich in vitamins B1, B2, B3, B5, B6, folic acid, vitamin C, calcium, iron, magnesium, phosphorous, potassium, and zinc!
  2. Need to relieve stress? Cut a cucumber and place it in a pot of boiling water. The chemicals and nutrients released in the stream create a calm atmosphere.
  3. The phrase "cool as a cucumber" originated from the cucumber's ability to cool the temperature of the blood. When applied topically, cucumbers can reduce facial swelling, which is why they are often used for facials!
  4. Cucumbers are great tools for around-the-house needs! Rubbing a cucumber slice on faucets, sinks, or stainless steel will remove tarnish and heavy residue. The outer waxy skin of the vegetable is also capable of erasing pen writing!
  5. The phytochemicals in cucumbers can kill bacteria that are responsible for bad breath. Press a slice of cucumber against the roof of your mouth for 30 seconds to freshen your breath!

CUCUMBER AND CANTALOUPE SALAD

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar or Champagne vinegar
  • 1 tsp. ground coriander
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. cardamom
  • 1/2 large cantaloupe, rind and seeds removed, cut into 1-inch pieces
  • 1 large cucumber, sliced diagonally 1/2-inch thick
  • 2 Fresno chiles (or pepper of your choice)
  • 1/4 cup cilantro chopped
  • 1/4 mint chopped
  • 1/2 cup roasted pumpkin seeds (optional)

Instructions

  1. Whisk the olive oil, vinegar, coriander, salt, pepper, and cardamom in a large bowl. Add the sliced cantaloupe, cucumber and chiles. Toss to coat in the dressing.
  2. Allow the salad to sit for 15 minutes, uncovered.
  3. To serve, add the cilantro, mint, and pumpkin seeds (optional); toss gently to combine ingredients. Enjoy!
