Folks around here have a saying... "Only in Easton." If you attended last Saturday's launch of the 267th season of the Easton Farmers' Market, you surely understand the meaning of that saying now. Nobody throws a party better than Easton!

With our own Mayor Panto proudly overseeing the celebration, Easton's Centre Square was aglow with the colors or spring flowers and fresh picked produce, brought to life by the jubilant sounds of the Big Easy Easton Brass Band. And did we mention it was Star Wars Day? There were wee little Darth Vaders dueling with light sabers alongside bakery cases stacked high with doughnuts resembling Yoda, there were hula hoopers alongside mermaids, and Obi Wan Kanobi heralding the market's opening with a trumpet - while colonial reenactors looked on. Yep... it was that kind of day. Wacky and wonderful and 100% Easton! Thank you to all our incredible volunteers who helped make the beautiful madness happen. And thank you to all who joined us and shopped and smiled and supported our farmers, bakers and makers. We love you, and we're ready to do it again this week... well, minus the jedi knights.

Who's your Favorite Vendor?
Each week you also get to nominate your ffavorite vendor. This week's Vendor of the Week was Salvaterra's Gardens - congrats Matt & Jess!!! We were pleased that all our new vendors also got votes. And Cabbage Throw Farm came in second for the week! This is a great way to show your love for that vendor who went the extra mile, or offered something that really knocked your socks off.
Cabbage Throw Farm
Cabbage Throw Farm has their first round of summer vegetables in the ground! Break into your best sun dance for dry, sunny weather for tomatoes, eggplant, cucumbers and summer squash. As for this week, spring mix is joining the Cabbage Throw tables. And ohhh KALE YEAH! It’s Mother’s Day! Show your mom some love by preparing a delicious meal using local ingredients. Grab a few bunches of Lacinato kale and try out this delicious recipe from Six Seasons cookbook:

Kale Sauce With Any Noodle
Process kale in a blender with oil and garlic, adding just a bit of pasta water to help the process along and to make a nice thick puree. Season with salt and pepper. 
Salvaterra's Garden
The greens are extra sweet and tasty this time of year and Salvaterra's has a wonderful selection for salads and cooking. Choose from spring mix, arugula, spinach, kale, chard, collards, red leaf, green leaf and romaine lettuce. They'll also have pak choy and scallions for stir-fries, cilantro for tacos, and fresh picked parsley and dill for your potato salads. Need a little crunch? How about some radishes? New this week... BEETS!

Flowers for Mom!

Pheasant Hill Farm will have several offerings with Mom in mind this Saturday — so Happy Mother’s Day to all those who carefully nurture their children, grandchildren, nieces, nephews, dogs, cats — we celebrate you! We will have lots of pretty and fragrant peony bouquets (they are actually cooperating this year, thanks to the high tunnel cover.)

Garden Starts!

Time to get that veggie garden started! Richard and Ed will be offering a wide selection of tomato plants this week including: cherry, grape, mid season, yellow, and several heirloom varieties in coir pots. You'll also find several varieties of sweet peppers available in cow pots which can be planted directly in the ground! Plus single potted fibrous begonias, heirloom columbine and more!

Phillips Farms will have an amazing selection of beautiful hanging baskets this weekend, just in time for Mother’s Day. Don’t forget to celebrate that special mom in your life and show her how much you care. 

In addition to hanging baskets, Phillips Farms will also be bringing to the market this week:  rhubarb, spring garlic, wintered-over spinach, greenhouse tomatoes, asparagus, apples, and cider. And their delicious juicy strawberries will be making their debut in just another week or two!

Enter a world of color and Easton PA history with picture book author Natascha Biebow and her book "The Crayon Man: The True Story of the Invention of Crayola Crayons".
Natascha will be at the Market to read and sign copies of "The Crayon Man" and have coloring activities for kids and kids at heart.

Natascha Biebow’s favorite crayon color is periwinkle blue because it makes her heart sing. She loves to draw and make stuff, just like the inventor of the Crayola crayons, Edwin Binney. She lives in London, where she writes, edits, coaches and mentors children’s book authors and illustrators at Blue Elephant Storyshaping, Find her at
