Over the last almost 4 years I've been blessed to have had two sons. In becoming a father, I've found myself more and more grateful for my Father, and my Grandfather having been and still being in my life. I never realized how much thought and effort can go into raising children. I've found myself almost daily asking the questions of what makes a good man, and what aims I should help direct my sons towards. It can be overwhelming but I have been fortunate to have both a Father and Grandfather who I can lean on for direction. Because of their hard work, sacrifices, and love, they've given me a firm foundation to build on, and access to continued advice, aid, and encouragement. As my sons grow, I have a confidence in the men they will become, not just because of my fathering, but because of the men who fathered and continue to father me.
This Sunday is Father's Day, and it's a time to honor those like my Old Man and his. If the Father figures in your life are anything like mine, they enjoy food, especially good food and a lot of it! Herbed Lobster Tails on the Grill
|
|
Ingredients:
- 4 large lobster tail (cut in half lengthwise)
- 1/4 cup olive oil
- juice of 1 lemon
- 1/4 cup fresh oregano leaves
- 4 to 5 large basil leaves
- 2 large sage leaves
- 2 cloves garlic (minced)
- 1 tablespoon fresh thyme
- 1 tablespoon white wine
- 1 teaspoon honey
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper

Directions:
- To prepare herb topping, place herbs, olive oil, wine, lemon juice, honey, and seasonings in a food processor and pulse until well combined. Taste mixture and add more honey if too acidic.
- Prepare charcoal grill for medium heat.
- Using kitchen shears, cut lobster tails in half lengthwise and rinse with cold water. Pat dry. Place lobster tails shell side down onto grill.
- Carefully, spoon herb mixture onto flesh portion. Be generous with the mixture. Cover grill and cook lobster for 8 to 12 minutes. Shells should turn a bright pink and flesh should be opaque all the way through the center. Once, cooked, removed from heat and serve.

Halibut Tacos w/ Coleslaw
|
|
Ingredients for the Fish:
- 1 large filet wild cod or Pacific halibut
- 2 teaspoons cumin
- 1 teaspoon garlic, crushed
- 1 teaspoon Himalayan pink salt
Ingredients for the Coleslaw:
- 1/4 head green cabbage, finely sliced
- 1 green onion, sliced
- 1 handful cilantro, chopped
- 1 lime, juiced
- 1 teaspoon apple cider or Ume plum vinegar 2-3 tablespoons olive oil salt to taste
Ingredients for the Tacos:
- Corn Tortillas
- Fresh salsa
- 1⁄2 cup mango (optional)
- Sour Cream (optional)
- A few slices of fresh Avocado (optional)

Directions for the Fish:
- Pat fish dry with paper towels. Season the fish with cumin, garlic, and salt.
- Heat grill to medium and let the fish cook for about 4 minutes each side or until the fish flakes apart easily with a fork.
Directions for the Coleslaw Topping:
- Mix all ingredients in a bowl. Dress with lime juice, olive oil, and salt.
Directions for the Tacos:
- Heat up corn tortillas
- Add fish and top with Coleslaw and optional toppings.

Grilled Marinated Swordfish Steaks
|
|
Ingredients:
- 4 center-cut swordfish steaks, about 6 ounces each, one-inch thick
- Salt and freshly ground pepper to taste
- 3 tablespoons olive oil
- 2 teaspoons soy sauce
- 1 tablespoon red-wine vinegar
- 4 sprigs rosemary or 1 teaspoon dried
- 1 tablespoon finely chopped garlic
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 2 teaspoons grated lemon rind
- ¼ teaspoon red pepper flakes

Directions:
- Preheat a charcoal grill or broiler, or heat a grill pan.
- Sprinkle fish with salt and pepper on both sides. Place oil in a flat dish, and add soy sauce, vinegar, rosemary, garlic, coriander, cumin, lemon rind and pepper flakes. Blend well. Place fish steaks in marinade, coat well on both sides, cover with plastic wrap and let stand for 10 to 15 minutes.
- If the swordfish is to be cooked on a grill (or grill pan), place fish on grill and cook for 3 to 4 minutes. Turn and cook for 3 minutes more. Cook longer if desired. If it is to be cooked under a broiler, place fish on a rack and cook for 3 to 4 minutes on each side. Serve with a string bean salad.
