Come see (and taste) for yourself how fast, easy and flavorful it is to make great soup using a pressure cooker. What used to take all day to make, can often times take less than 30 minutes. And the flavor is unbeatable!

Come join Sue for a chance to learn to use the Ankarsrum mixer. This is a one of a kind class that will focus entirely on the use of the Ankarsrum and its unique attachments.


We will of course make bread and butter, but also use the various Ankarsrum attachments to make oatmeal, ice cream, smoothies and apple sauce.


It will be a fun class with lots of sampling!

RECIPE



This was a class favorite from our Bread Beckers Annual Christmas Class of 2024. It is not your typical pasta salad. It is full of flavor, both sweet and savory. The Olivelle Oils, Balsamics and flavorings really bring out the best in the dish. Try it with or without the chicken and/or feta cheese. But these really add the savory component.


ORANGE CRANBERRY PASTA SALAD


This is a delicious sweet and savory twist on a pasta salad using our new Kamut pasta and Olivelle Infused Oils and Balsamics. The red peppers and green onions add both flavor and color to this dish. This is the perfect make-ahead dish as the flavors meld once refrigerated for several hours or overnight.


•   1-12 oz box of Kamut pasta

•   Pasta Rocks by Olivelle for boiling (optional)


•   2-3 chicken breast or thighs, cut in cubes

•   1 Tbsp Butcher’s Spice Blend

•   2 tsp Mediterranean Rosemary Rub & Seasoning

•   6-8 cloves of garlic, minced

•   3 Tbsp Blood Orange Infused Olive Oil

•   3-4 green onions sliced

•   1 red bell pepper, diced

•   ¼ -1/2 cup dried cranberries


For the Dressing:

•   3 Tablespoons Blood Orange Infused Olive Oil

•   ½ cup Cranberry Spice Balsamic Vinegar by Olivelle

•   1 Tablespoon Mediterranean Rosemary Rub

•   1 Tablespoon Butchers Spice Blend or Rosemary Infused Salt by Olivelle

•   ½ cup crumbled feta cheese, optional


In a large pot bring water to a boil. Add pasta rock and let boil for 1-3 minutes depending on your salt preference and the size of the rock. Remove pasta rock and set aside to dry for another use. Add pasta and cook for 7-8 minutes. Drain and set aside to cool.


While pasta is cooking, season the chicken pieces with the Butcher’s Spice Blend, Mediterranean Rosemary Rub and minced garlic. Set aside to marinate for at least 15 minutes.


Heat a skillet over medium heat, when hot add the Blood Orange Infused Olive Oil. Add the chicken and cook until done. (internal temperature of 165 degrees. Remove from heat and set aside to cool.


Combine cooled pasta, green onions, red peppers, dried cranberries and cooked chicken in a serving bowl and toss with Blood Orange Oil, Cranberry Spice Balsamic Vinegar, Mediterranean Rosemary Rub, Butchers Spice Blend or Rosemary Infused Salt.

Add feta cheese if desired. Refrigerate until ready to serve.

REAL BREAD AND BLOOD SUGAR

I often hear people say they can’t eat bread because they are diabetic or even prediabetic. Even when people are considering real bread made from freshly milled flour, I get asked, “How is this bread going to affect my blood sugar issues?”.

Well, I want to share with you some good news. While commercially processed flour and bread products that are devoid of fiber and high in sugar tend to spike blood sugar levels and the high sugar, low fiber diet of America is actually contributing to the rise in diabetes in adults and children alike, real whole grains and real bread can actually have the opposite effect.


White sugar along with commercially processed white flour products are considered simple carbohydrates while whole grains and bread made freshly milled flour along with most real fruits and vegetables are complex carbohydrates. Complex carbohydrates, such as whole grains and bread made from freshly milled flour, are high in fiber and therefore more slowly digested and broken down than simple carbohydrates. This in turn contributes to a slower conversion of the carbohydrates into sugars which our bodies need for energy.


This slow release of sugars into the blood stream, prevents the rapid spikes in our blood sugar that we often see when processed foods and breads are consumed. And an added bonus, this slow release of sugars that is converted to energy gives our bodies the ability to supply us with sustained energy throughout the day. This slower conversion of sugars also helps to eliminate the abrupt blood sugar highs and lows and sudden crashes we often experience from consuming simple carbohydrates, in the form high sugar foods, snacks, candies and beverages.


And it’s not just the fiber that plays a part in keeping our blood sugar in check. The abundance of B vitamins, such as thiamine and riboflavin, found in the bran and germ portions of whole grains and of course our real bread made from freshly milled flour, are key players in carbohydrate metabolism and help our bodies convert that sugar into energy. Whole grains are also a rich source of chromium, an insulin cofactor, that encourages the uptake of sugar into our cells to produce energy.


So, we can absolutely say that whole grains are an essential part of a healthy diet to manage and improve blood sugar issues. Just one more reason to incorporate whole grains and real bread into your everyday diet.
