Recipe: Southern Brunswick Stew
A rich and slightly spicy stew perfect for keeping you warm when the weather is chilly. This stew is hearty to the core and tantalizingly tasty.
Ingredients for 8 servings
6 tbsp. unsalted butter
1.5 cups onion, chopped
3 cloves garlic, minced
3 cups potatoes, diced
2 cups frozen corn
1.5 cups frozen baby lima beans
3 cups chicken stock
1 (14.5 oz) can diced tomatoes
1.5 cups barbecue sauce
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp salt
1/4 tsp cayenne pepper, more if desired
1/2 tsp ground black pepper
2 cups Louie's shredded chicken
2 cups Louie's shredded Pork
Chopped green onions for garnish, optional
Biscuits, optional, for serving
Coleslaw, optional, for serving
Directions
- In a large Dutch oven, melt the butter over medium heat.
- Add the onion and cook, stirring constantly, until the onion turns translucent (about 3-4 minutes).
- Add the garlic and cook, stirring frequently, for 2 minutes.
- Add the potatoes, corn, lima beans, chicken stock, and tomatoes.
- Bring the mixture to a boil.
- Cover and reduce the heat.
- Let the mixture simmer until the vegetables are tender (about 25 minutes).
- Add the barbecue sauce, brown sugar, Worcestershire sauce, salt, cayenne, black pepper, chicken, and pork. Mix well to fully combine.
- Let the soup simmer for 15 minutes, uncovered.
- Serve!
