Recipe: Creamy Bacon & Chicken Pasta


This is a rich and comforting dish that’s perfect for a cozy dinner. Tender chicken, flavorful Louie's bacon, and pasta are coated in a luscious garlic cream sauce, making it an irresistible combination. The smoky flavor of bacon pairs beautifully with the creamy sauce.


Ingredients

  • 12 oz pasta (penne, fettuccine, or your favorite type)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 6 slices Louie's bacon, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)
  • Salt and pepper to taste
  • Broccoli, optional
  • Fresh parsley, chopped (optional, for garnish)



Directions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, leaving about 1 tablespoon of the bacon fat in the skillet.
  3. Cook the chicken: Add the olive oil to the skillet with the bacon fat, then add the chicken pieces. Season with salt, pepper, and Italian herbs. Cook for 6-8 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. Make the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
  5. Add cheese and combine: Stir in the grated Parmesan cheese until melted and the sauce is smooth. Add the cooked chicken and bacon back into the skillet, tossing to coat in the sauce.
  6. Combine with pasta: Add the drained pasta to the skillet, tossing everything together until the pasta is coated in the creamy sauce. Adjust seasoning with more salt and pepper if needed.
  7. Mix in cooked broccoli if desired.
  8. Serve: Serve the creamy chicken and bacon pasta hot, garnished with fresh parsley and extra Parmesan cheese if desired.
