Snowshoe Yoga Festival
Join Connor at the Rippling River Resort for a snowshoe and yoga adventure! The evening will start off with 20 minutes of yoga flow around the campfire, followed by 30 minutes of snowshoeing along the Carp River. Ending the hike at the Lodge, you'll find complimentary wine tasting and chair massages to bring the evening to a close.

Good Eats with Wildly Healthy
Sweet Potato Chili
Winter time is the best time for homemade soups and chili's. This sweet potato chili from Wildly Healthy's Rachel Sabin, is an excellent way to get a dose of vitamin A, vitamin C, potassium, and fiber (just to name a few).

This recipe can be modified as a vegetarian option as well by substituting the chicken broth for vegetable broth, and omitting the Italian sausage.

We hope you enjoy February's delicious and hearty recipe!


Ingredients:

  • 2 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tbsp. tomato paste
  • 1 lb. Italian sausage
  • 1 tbsp. chili powder 
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne
  • Salt and black pepper
  • 4 large sweet potatoes, cubed into 1" pieces
  • 4 c. low-sodium chicken broth
  • 1 (14.5-oz.) can diced tomatoes
  • Freshly chopped parsley, for serving

 Directions: 

  1. In a large pot over medium heat, heat oil. Add onion and bell pepper and cook until soft. Add garlic and cook for about a minute then add tomato paste and stir until well coated. 
  2. Add sausage and cook, breaking up meat with a wooden spoon until no longer pink. Add chili powder, oregano, garlic powder, and cayenne and season with salt and pepper. 
  3. Add sweet potatoes, broth, and tomatoes and bring to a boil. Reduce heat and let simmer, covered, until sweet potatoes are tender, about 15 minutes. 
  4. Garnish with parsley before serving.

She works at MARESA as a Health Educator, has a master's in public health, and has recently become a certified health coach. Rachel believes in eating dessert every day and enjoys clean baking (her fiancé loves being the taste tester). She is all about moderation and looks forward to seeing you at TULIVESI on the mat!
