Life is Betta With Feta

With temperatures in the high 70s, it's positively perfect for an open-air market this Saturday! Here's your chance to shake off the winter/spring slog and add some freshness to your weekly routine. While you might not think of cheese as a seasonal item, guess again! As the seasons change, so does the forage (grasses, legumes, and forbs) for animals as new plants bloom and grow. This in turn affects both the flavor of the milk, and thus, the flavor of the cheese. So naturally a reintroduction to Raspberry Ridge Creamery is in order. They are vending at the winter market for the first time, so you have to try a market favorite: sheep's milk feta! It's tangy, salty flavor will make any dish pop. If you're looking for a appetizer featuring this local cheese, give the Khachapuri recipe a try below. It pairs seamlessly with a side of olives from Jersey Pickles!

Pizza Dough Khachapuri

(Georgian Cheese Bread)

Ingredients

  • 2 cups shredded low moisture mozzarella cheese
  • 1 cup crumbled feta 
  • 3/4 cup ricotta cheese
  • Kosher salt 
  • Freshly ground black pepper 
  • 10 oz. pizza dough, room temperature
  • 1 large egg yolk
  • 1 Tbsp. butter, sliced into thin patties
  • Chopped parsley, for garnish

Directions


  1. Preheat oven to 450°. In a medium bowl, combine mozzarella, feta, and ricotta. Season with a pinch of salt and pepper. 
  2. On a lightly floured piece of parchment paper, roll dough into an oval ⅛-inch thin. Top with three quarters of the cheese, leaving a 1/2-inch border. Roll up two opposing long sides of the dough, creating a boat-like shape. Twist and roll in both ends. Top center with remaining cheese. 
  3. Bake until the cheese is melted and the dough is golden, about 20 minutes. 
  4. Remove from the oven and sprinkle with parsley. Add egg yolk on center of cheese and top with butter. Tear off pieces of the bread and dip in the cheese and yolk while it’s still hot.

Everything is better with pickles! 😄 It's true. From firecraker pickles with a kick, to pickled mushrooms, olives, sundried tomatoes and more! Jersey Pickles has all your fresh "picks" to snack, top, or munch on. 

Primordia Mushroom Farm

Have you heard? Primordia Mushroom Farm is now producing our very own powdered mushroom extracts!! Our extracts, unlike many on the market are whole fruiting body extracts. What does that mean? It means the powders are made from nothing but our mushrooms, not myceliated rice, oats, or other starchy fillers. As of this weekend we will have the full line up of powders- 6 varieties to choose from! Coming soon will be our combo powder - keep an eye out :)

Salvaterra's Gardens

We will have spring mix, arugula, spinach, kale, baby chard, radish, red and yellow onion, red and yellow potato, radishes, turnips, beets, carrots. We are out of scallions for a couple weeks and are running low on onions and potatoes!

Zekraft

This week from Zekraft… Iced coffee, espresso & chai drinks abound! This week we'll begin featuring gluten free baked goods from our pastry department, this week we will be offering Red Velvet Cookies, Banana Chocolate Chip Bread, and Lemon Poppyseed Bread this is in addition to our gluten tree energy bites, granola bars and granola. Our salads this week are… Thai Chicken, Turkey Blueberry Brie, Smoked Gouda Chicken, Roasted Vegetable, Greek Chicken, and Quinoa Apple and we’re featuring soups from around the world: Asian Beef, Mulligatawny (Indian), and Tuscan Chicken. Scholl Orchards

Scholl's is brining their consistent and delicious array of apples to market this week. Get ready to have an apple feast! Varieties are: Evercrisp, Ludacrisp, Granny Smith, Pink Lady, Gold Rush, and Bosc pears!


They will also be bringing their scrumptious fresh cider, plenty of jarred items, and lots of winter vegetables such as cabbage, beets, shallots, carrots, onions, potatoes, winter squash, and Brussel sprouts!
