Crawfish are now available for pre-order every week!
These will not be graded and sized yet as we are still very early in the season.
All pre-orders must be picked up on Friday and we strongly encourage you to plan your boils for Friday as well! As a fair warning the crawfish are still not fully hard shell, so shelf life is minimum at best! In other words, these guys may not make it if you hold them until Saturday or Sunday! This should change as they get heartier later in the season.
How does this product come?
Pre-orders this year will be done only by the sack. Each sack will average about 34 pounds.
What is the price?
Price will change week by week. Every Monday on our website (
www.groomerseafood.com
) the prices will be posted.
How much should I get?
Plan on ordering at least 2 to 3 pounds of crawfish per adult at your boil. Bigger eaters like myself, may need 4 to 5 pounds.
How do I purge them?
The golden rule with crawfish is that you must purge the little buggers to remove all the muck that comes with living down in the mud. To do this, right before boiling, pour the sack of crawfish in a small children's pool or ice chest, cover with one box of salt, and add enough water to just cover the crawfish. Gently stir for 3-4 minutes, drain, and then rinse the crawfish with a hose. While purging, throw away "floaters", which are dead crawfish. You don't want these going in your boil.
How to Pre-Order:
Pre-orders must be done either on Monday or on Tuesday.
and follow the prompts. Every pre-order must be paid for on the site to be locked in for a reserved bag. Every week we will order a little extra, but if you don't make this deadline we cannot guarantee that we will be able to fill your order.
Live Product Risk:
Keep in mind that this is a live product that has had a very rough year, and if this product is not taken care of it is very easy to lose. Groomer's is not responsible for any loss of product once it leaves our doors, so be sure to inspect your bags. We will pack your crawfish with ice for travel in either a cooler you provide or in our own boxes. Should you choose to store your mudbugs, keep them in a cool, moist environment. The best place is in a cooler with ice on the bottom, newspaper/paper towels to separate and damp newspaper or paper towels on top. Be sure to keep the lid cracked so they can breathe!

Ingredients:
- Claws from 3 boiled lobsters, main claw shell removed (like crab claws)
- egg wash (3 eggs, beaten with a little water)
- Seasoned Flour
- enough oil to fry
|
|
Instructions:
After boiling lobsters, let them cool enough to handle. Crack off claws and break open the main part of shell to remove whole clawmeat with "finger" shell still attached. Heat oil for frying. Pass clawmeat through egg wash and seasoned flour. Fry just until golden on each side. (Not more than 1 minute per side).
Serve with melted (or drawn) butter.

Pan Seared Tilefish With Garlic & Herbs
|
|
Ingredients:
- 2 skinless tilefish (about 7 to 8 ounces each)
- Kosher salt, to taste
- Black pepper, to taste
- 2 ½ tablespoons unsalted butter
- 3 green garlic shoots or scallions, thinly sliced
- 1 ½ tablespoons finely chopped chives, mint, lovage and/or sorrel
- 1 tablespoon minced lemon thyme or regular leaves
- 2 teaspoons finely chopped tarragon, basil or marjoram
- Juice of 1/2 lemon

Instructions:
- Remove any remaining pin bones in the fish, pat dry, and season both sides with salt and pepper.
- In a large sauté pan over medium heat, melt butter. Once butter has begun to foam, lay fish in pan. Add green garlic or scallions and a pinch of salt. Without disturbing the fish, tilt the pan toward you; using a spoon, ladle green garlic butter over fish. Continue basting fish for 2 to 3 minutes.
- Using a spatula, gently flip fish. Reduce heat to low, cover pan and cook for 2 minutes.
- Uncover pan, add herbs and continue basting fish with butter until it is just cooked through, another minute or two longer.
- Transfer fish to a serving platter or individual plates, pour pan sauce over the top, and pour lemon juice over everything. Season with more salt and black pepper if needed. Serve immediately.

Ingredients:
- 1 c. all-purpose flour
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 4 (6-oz.) tilapia filets
- Kosher salt
- Freshly ground black pepper
- 1 tbsp. canola or vegetable oil
- 2 tbsp. cilantro leaves, for garnish
- Lime wedges, for serving

Instructions:
- In a large bowl, whisk together flour, garlic powder, onion powder, chili powder, and cumin. Whisk to combine.
- Season tilapia filets generously with salt and pepper, then dip each in flour mixture, shaking off any excess flour. Place on a clean plate or baking sheet.
- In a large, nonstick skillet over medium heat, heat oil. Add 2 filets and cook 3 to 4 minutes per side, until crust is golden and fish flakes easily with a fork. Repeat with remaining filets.
- Serve immediately with cilantro and lime wedges.

Seafood Salad Lettuce Wraps
|
|
Ingredients:
Servings: Makes about 8 rolls so probably at least 2-3 people.
- 1-2 8 oz. package of Thai Rice Noodles
- 1 head of Boston Lettuce or Iceberg Lettuce, leaves separated
- 2-3 ounces of Octopus, Squid, or Seaweed Salad per Wrap (1 lb of total seafood salad)
- Sriracha Sauce to taste (The Thai Hot Sauce often seen at Asian restaurants with a big red rooster on the bottle. Gives the wraps a little more zing.)

Instructions:
1. Make the Rice Noodles according to the package. (Usually you are either boiling them or cooking them in the microwave. Either works fine, doing them in the microwave saves time and still taste great.)
2. Spoon 2-3 ounces of both Rice Noodles and Seafood Salad onto each lettuce leaf and finish with a small dab of Sriracha Sauce if desired.
3. Fold lettuce leaf like a taco and enjoy!!
