Meet Bridget Davis

Ritz Cracker Chicken

More commonly referred to as Poppy Seed Chicken. This is a crowd favorite in my house.

Ingredients

  • 5 cups diced cooked chicken
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup sour cream
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon poultry seasoning
  • 2 cups crushed Ritz crackers (1 1/2 sleeves)
  • ½ cup (1 stick) unsalted butter, melted
  • ½ Tablespoon poppy seeds

Instructions

  • Preheat the oven to 350°F. Spray a 9x13-inch baking dish with cooking spray.
  • Add 5 cups diced cooked chicken to the bottom of the baking dish.
  • In a large bowl, stir together 2 (10.5 ounce) cans cream of chicken soup, 1 cup sour cream, 1/4 teaspoon black pepper, 1/4 teaspoon dried thyme, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon poultry seasoning.
  • Spread on top of the chicken evenly.
  • In a medium bowl, stir together 2 cups crushed Ritz crackers, 1/2 cup (1 stick) unsalted butter, melted and 1/2 Tablespoon poppy seeds.
  • Sprinkle the crumbs on top of the sauce.
  • Bake for 25-30 minutes, uncovered, until bubbly and the top is lightly browned. Serve immediately.
