It's time to make hay again! Every four weeks during the summer, we cut alfalfa into haylage to feed our cows. Each cow eats about 40 pounds of haylage a day, so we have to harvest a lot of it each summer to last us a whole year. How is it done? Hansen's Dairy stores in Waterloo and Cedar Falls are operating under reduced hours during COVID-19.

Farm tours are now open! We have implemented new restrictions on group size plus additional cleanliness and safety measures. At this time only 9 people per tour will be allowed, and you MUST have a reservation.

We want to say a huge THANK YOU to everyone who supported us as we held our pop-up truck sales in Grundy Center, New Hartford, Wellsburg, Jesup, Dike, Sunnyside Country Club and the Hickory Hollow neighborhood! The sales were mutually beneficial - we provided customers with safe, easy access to perishable groceries during the pandemic, and it allowed us to make extra income while we couldn't host farm tours.

The June Customer of the Month is Lesta Burgess
of Waterloo.
Lesta and her granddaughters were looking for old-fashioned dipped ice cream one day when they discovered the Hansen's Dairy Waterloo store. Now her favorite ice cream flavor is Chocolate Turtle.
Originally from Oklahoma, Lesta compared Hansen's stores to Braum's Ice Cream and Dairy stores located in the south central area of the United States.
One of our Hansen's Dairy employees suggested she try the whole milk.
"I fell in love with it," Lesta said. "
My family has problems digesting milk, but we are able to tolerate your non-homogenized milk."
She also loves how you can sample a spoonful of any of the ice cream flavors and enjoys shopping for the Amish Peanut Brittle during the Christmas season.
"The ladies in the store are very friendly," Lesta said. "O
verall it's just a nice little store to come to."

Our June Cow of the Month,
Glamorous
,
is an overachiever -actually recording 160 pounds a day. She is 5 years old and has had four calves in her lifetime (two heifers named Grinch and Great, plus two bulls). Her lifetime production is over 100,000 pounds of milk!
While Glamorous is as strong as a horse, she used to be as stubborn as a mule. Herd manager Blake Hansen says it took her four years to learn to behave in the milking parlor, but now she's amazing to work with. He is also excited to see if Grinch and Great follow in mom's hoofsteps!

It's asparagus season! Here's a delicious and hearty wrap you can easily whip up using a variety of fresh, local ingredients. You could use any cheese or meat and any number of vegetables as we progress through the growing season. For more recipes using local, seasonal foods, check out my website

10 minutes
Bake time: 30 minutes
Total time: 40 minutes
Serves 4 or more

Ingredients
- 1 bunch asparagus**
- 1 bunch green onions
- 1 Tbsp California Olive Ranch olive oil*
- Beeler's Uncured Boneless Ham,* thinly sliced
- Decatur Dairy Muenster Cheese,* thinly sliced
- 1 container Rolling Hills Romaine or Spring Mix Lettuce*
- Westby Sour Cream*
- Westby Parmesan Cheese* (optional)
Directions
- Preheat oven to 400F.
- Cut bottoms of asparagus so all tough/woody parts are trimmed off. Place spears side-by-side in a row on a parchment-lined cookie sheet.
- Trim off roots and tops of green onions so they are about as long as the asparagus spears.
- Place all on parchment-lined cookie sheet with asparagus spears.
- Drizzle olive oil over asparagus and onions, tossing to coat evenly.
- Lightly salt if desired.
- Roast in oven at 400F for 30 minutes.
- While vegetables are in the oven, thinly slice cheese and ham.
- When vegetables are done, assemble wraps starting with lettuce and then layering ham, cheese and vegetables.
- Top with a dollop of sour cream and parmesan sprinkles. Roll and enjoy!
