Dear fellow food-lover,

For centuries, thrifty  Mediterranean  cooks have kept fermented dairy products in their kitchens (think of Greek yogurt and traditional cheeses like Parmigiano-Reggiano!) to prevent spoiling and help ingredients last longer. Today, we can use this as inspiration as we stock our own kitchens and look for new ways to cook.

Happy cooking from the team at Oldways!
Dairy in the Mediterranean Diet
Although a glass of milk is not typical in a traditional Mediterranean Diet, you'll find delicious and nutritious fermented forms of dairy like yogurt, artisan cheese, and kefir.
“This recipe is my mother’s recreation of the perfect warm goat cheese salad served at Ma Bourgogne, Place des Voges in Paris,” says Oldways President, Sara Baer-Sinnott.
