Good Afternoon Port City Seafoodies!

      Commercial Fisherman and Fishmongers across the country are gearing up for one of the busiest weeks of the year.  We celebrate our nation's birthday next week and for years Americans have celebrated by grilling and steaming seafood.  The good news is that so far, nature has been cooperating in providing a stellar variety of fish and shellfish to kick things off this weekend.    

      Local Fisherman have been bringing in Grouper, Red Drum, Sea Mullet, Black Sea Bass, Triggerfish, Flounder,Yellowfin Tuna, Black Tip Shark and Much More.  If you haven't tried Black Tip Shark its a great mild steak fish for the grill (its good blackened or marinated in a Teriyaki Sauce).  Its also a good value at $10/lb.  If you are not up for Shark, you can never go wrong with NC Yellowfin Tuna, Flounder or Grouper.  They are three fish that are sure to please. 

      We will also have Jumbo Gulf Shrimp and Mid-Atlantic Sea Scallops that are perfect for wrapping in bacon and grilling next to some Black Tip Shark or Tuna.  NC shrimp are starting to grow and we will have a Fresh 26/30ct Heads On Shrimp this weekend (they are the perfect size for a low country boil).We will also have plenty of Live Blue Crabs, Snow Crab Legs, and Little neck clams to add to those boils as well.

NC Grouper!

N.C. Blacktip Shark 

Ever been scared about that fin that pops up next to you while your swimming in the ocean.  Forget about your fear and show those fish whose at the top of the food chain.   Black Tip Shark steaks are a delicious undervalued steak-like fish that works great on the grill.  If you need a recipe, marinate the shark in teriyaki, brown sugar, and lemon juice for 4-5 hours, then add butter and garlic powder. Cook the steaks on the grill for 5-8 minutes, turn them and broil more untill the steak flakes.

NC Yellowfin Tuna 

We just picked up some beautiful locally landed Tuna and we will have them cut into steaks!  These fish are prime time and they will be great for sushi, the grill, or cut up for skewers (just be careful not to overcook).  Local Yellowfin Tuna, is a Seaview Crab Company favorite, and is fish for people that don't like fish!

N.C. Sea Bass 

Sea Bass is one of those fish that is sure to please. They have a delicate, mild white meat, that makes even the most fickle seafood eaters happy.    One of our favorite recipes for these fish is to wrap them in tin foil with onions, tomatoes, olive oil and garlic, and then cook them on the grill (remember to poke a few holes in the foil to get that smoky flavor).  Who wants frozen Chilean Sea Bass when when you can get only the best fresh Carolina Sea Bass.
