Cooking Fresh for Spring
Mediterranean Swiss Chard
Swiss chard is a leafy green belonging to the Chenopodioideae family, which also includes beets and spinach. Although its name may lead you to believe it originated in Switzerland, Swiss chard is native to the Mediterranean.
You'll find Swiss Chard this week at Cabbage Throw Farm and Salvaterra's Gardens.

Cabbage Throw Farm

This week, Cabbage Throw Farm is celebrating their Italian roots with broccoli rabe! First harvest of the year and in limited quantity so get your garlic ready to sauté with this delicious bitter green.

Also from the farm this week are the usual spring offerings - lots of baby greens, salad greens and cooking greens along with radish and herbs. 

Recipe of the week:
Broccoli Rabe Pasta
Blanch broccoli rabe to maintain its vibrant green.  
Brown sliced garlic in olive oil with crushed red pepper.  
Add in broccoli rabe and season with salt and pepper. 
Toss in with fresh cavatelli (Lemon Tree Lane Kitchen pasta available inside the Easton Public Market) and Ricotta and Romano cheese.

Scholl Orchards
Last winter Scholl's grafted 3,000 apple trees. This month they undertook the herculen task of planting them in the ground. And as you can see, it's a family affair!

This week they have asparagus, and plenty of crisp apples (Goldrush, Evercrisp, Fuji, Honeycrisp), fresh-pressed cider, and D'anjou and Bosc pears. Try tossing Scholl's pears or apples in a fresh spinach salad with some cheese from Valley Milkhouse and a sprinkling of trailmix from Lakeside Maple!

Salvaterra's Gardens
Salvaterra's Gardens will have a bounty of greens this week with Spring mix and head lettuce for big fresh salads - or arugula if you prefer something a bit zestier. Look for collards and kale, tender spinach, escarole, pak choy, hakurei turnips, scallions (great on the grill), beets, carrots and lots of fresh aromatic herbs - parsley, dill and cilantro.

Backyard Growers

Look for bell pepper, heirloom cherry and standard tomato plants, and a limited selection of hot pepper plants available this week. This will be the last day for 6 packs of zinnias and yellow marigolds. But you'll find flats of snapdragons, single potted bacopa (both blue and white), some calla lilies, plus a few iris.
Pheasant Hill Farm
Pheasant Hill Farm will have some pretty floral bouquets, featuring Chantilly snapdragons and iris, for your Memorial Day gathering as we remember our veterans.

And PorTch Tea will have all your favorite flavors of kombucha for your Memorial Holiday celebration.

It’s Memorial Day weekend, so Doughnut Love will be kicking off the unofficial start of summer with some patriotic & fresh flavors!

Breakaway Farms is getting patriotic with their pork sausage this weekend. In fact, Farmer Nate was stuffing them as I typed this e-update! Their Red, White & Blue Variety pack contains: Red- Strawberry Balsamic, White - All American Brat and Blue - Blueberry Thyme. Throw 'em all on your grill and let your guests choose their favorite.

The Farmstan's Sunshine Salad is a crowd pleaser, a taste bud wow-er, and has a bit of a cult following if we do say so ourselves! How could it possibly get any better? Two words: grilling season.

Step 1) Pick up some pasture-raised poultry from the Breakaway Farms booth. Step 2) Head over to the Farmstand Recipes booth to pick up a Sunshine Salad (or two) (or five) ;-). Step 3) Grill up that chicken and serve over our Sunshine Salad for a quintessential springtime dinner. Hooray!

Okay, so the famed Kimchi fries didn't make to market last week, but they're here for Memorial Day weekend! What are they, you ask? They are shoestring fries, topped with a 3-blend cheese, chipotle gochujang aioli, and carmelized kimchi! A great snack to share while walking around the circle.

This week Susan has been thinking about some of the questions routinely asked by her customers. So she wanted to let folks know that her soaps are vegetable based cold process soaps (with the exception of three of them). Her Honey Rosemilk Soap is made with buttermilk, honey and natural beeswax. Her Milk and Honey Soap is made with goat's milk and honey. And the infamous Bacon Soap ( not just for Bacon Festival anymore) is made with lard and bacon drippings.
