There's just nothing better than fresh seafood, but it's a very hard thing to do. I still remember about ten years ago I visited a fairly popular "fresh" seafood market on our Texas Coast. I walked in, excited to see a vast array of locally caught seafood with a difference you could see, but all I was met with was *something* labeled as fresh red snapper, that was very clearly not fresh and very clearly not even red snapper! I was appalled, but the longer I've been in this business the more and more I've seen such practices. Fresh seafood is hard to do, there are many logistical decisions that have to be made, you have to plan out your week with product that hasn't even been caught yet, and you have to keep things moving.
But what makes Fresh Seafood so hard to do is what makes Groomer's Seafood unique. We are not simply a retail market. Cioppino San Francisco Style
|
|
Ingredients:
- 1/4 c. extra-virgin olive oil
- 1 bulb fennel, chopped, fronds reserved
- 2 shallots, minced
- 2 garlic cloves, thinly sliced
- 1 tsp. dried oregano
- 1/2 tsp. red pepper flakes
- Kosher salt
- Freshly ground black pepper
- 1 1/2 c. dry white wine
- 1 (28-oz.) can crushed tomatoes
- 1 (8-oz.) bottle clam juice
- 2 c. water
- 2 dried bay leaves
- 1 2"-thick strip orange zest (optional)
- 1 dozen littleneck/countneck clams, scrubbed
- 1 dozen mussels, scrubbed
- 1 lb. shrimp, peeled and deveined
- 1 lb. halibut, skin removed and cut into 1" pieces
- 1/4 c. freshly chopped parsley, for serving
- Baguette, for serving
- Lemon wedges, for serving

Directions:
- Heat oil in a large pot over medium heat. Add fennel and shallots and cook until soft and translucent, 6 minutes. Add garlic, oregano, and red pepper flakes and season with salt and pepper. Cook until fragrant, 1 minute more.
- Add wine and let boil until reduced by half, 3 to 5 minutes, scraping up browned bits with a wooden spoon. Add tomatoes, clam juice, water, bay leaves, and orange zest (if using). Stir to combine, bring to a low simmer, and cook, stirring occasionally, for 20 minutes.
- Remove bay leaves and orange zest. Add clams to simmering broth, cover, and cook for 5 minutes. Uncover, add mussels in an even layer, then shrimp, then halibut. Do not stir. Cover again and cook for 5 more minutes, or until all clams and mussels are opened and shrimp and fish is cooked through and opaque. Discard any unopened mussels and clams. Season with salt and pepper to taste.
- To serve, ladle soup into bowls and top with fennel fronds and chopped parsley. Serve with baguette and lemon wedges on the side.

Ingredients:
- 2 skin-on trout filets
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 garlic cloves, minced
- 3 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- salt and pepper, to taste

Directions:
- Heat a non-stick skillet over medium-high heat. Melt butter with olive oil until frothy. Cook trout filets, skin side down, for 2 minutes, then carefully flip with a thin wide spatula. Cook for another minute or until almost cooked through, then add garlic, parsley, and lemon juice and continue to cook for another minute or so until the fish is golden brown and the flesh flakes off easily with a fork. Transfer to serving plates and enjoy.

Butter Poached
Lemon Garlic Tilapia

Ingredients:
- 3-4 fresh tilapia fillets
- 1 lemon
- 1/3 cup salted butter
- 2 tablespoons minced garlic
- 1 teaspoon dried parsley flakes
- pepper to taste
- Lemon slices for garnish if desired
|
|
Directions:
- Preheat your oven to 400 °F.
- Grease the pan with your butter, then melt the remaining butter.
- Juice and zest the lemon.
- Rinse the tilapia fillets under cool water and then pat them dry with paper towels.
- Place the tilapia fillets into the buttered baking dish.
- Mix the lemon juice, butter and garlic together, then drizzle over the fish fillets.
- Sprinkle the fillets with pepper and parsley.
- Bake in the oven for 15-20 minutes. The fish is done when it turns a solid white and flakes easily when pulled apart with a fork.
- Serve.
