Dear Church Family,


I hope and pray you're doing well and continuing to experience God's presence in your life.


I wanted to share a personal update and a word of gratitude with you.


My recent trip to Montreal, Canada, with Jonah to visit my dad has truly been a blessing in disguise. When we first arrived, my dad hadn’t eaten in three days—he was weak, shaking, and vomiting. It was a difficult and discouraging time for him and for our family.


But God is good.


In his two-year-old way, Jonah brought a twinkle back into his grandfather’s eyes. Since then, my dad has started eating again—multiple meals a day—he's talking more after a long season of silence and discouragement, and we’ve even heard him laughing again.



At my mom’s request, I stayed a few extra days to continue monitoring his progress. With my brother also in town, we’ve all seen signs of real improvement and feel hopeful


Jonah and I are scheduled to return to Portland on Thursday, May 15, at 9:00 PM. God willing, I’ll be back in action the following day.


This weekend, I’ll be preaching at Stone Tower, continuing our series on Building Biblical Community.

The topic is Part 3 – The Priesthood of All Believers. Please keep that message in prayer.


The following week, I’ll be traveling to Illinois to baptize one of the youth I had the privilege of ministering to during my time in Hinsdale.


I can’t thank you enough for the support and prayers you’ve extended to me and my family during this time. It has meant so much to us. Please continue to lift up my dad in prayer as he continues his journey toward recovery.


I’m looking forward to being back with you all very soon!

Outdoor Church is scheduled for Aug 9th at Silver Falls State Park and Church Campout is being planned for Aug 8th-10th at Silver Falls State Park.

If you plan on camping with us over the Outdoor Church Weekend please let Melissa Brownell know if you would like her to reserve a site for you. Prices vary.

First Friday

Your church family is invited to our next First Friday on June 6. First Friday is a once-monthly inspirational community fellowship event. It will be held at Adventist Health Portland Medical Center. It begins at 7:15 p.m. on the lower level in Amphitheaters C & D. 


This First Friday will feature an inspirational talk by Les Zollbrecht and music by Alive Worship. We would like to invite you to join us for this FREE event and we encourage you to invite your friends and family members. For the crust

  • 1 1/2 cups vegan graham cracker crumbs*
  • 5 tablespoons melted vegan butter or coconut oil
  • 1/4 cup granulated sugar

For the filling

  • 32 ounces (4 8-ounce packages) Tofutti vegan cream cheese See notes, do NOT use Trader Joe's!
  • (1) 13.5-ounce can coconut cream
  • 1 1/4 cups granulated sugar
  • 4 tablespoons cornstarch
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons lemon juice, from about 2 small lemons

Optional fresh strawberry sauce

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest, from 1 small lemon


Instructions 

  • Preheat the oven to 350 degrees F. Wrap a 9 inch springform pan with 1-2 layers of aluminum foil, covering the bottom and the sides. Cut a circle of parchment paper for the bottom of the pan, and spray lightly with oil.

For the crust

  • In a medium bowl, add the cookie crumbs, melted vegan butter and sugar. Stir well to combine, then press down into the bottom of the prepared pan. Press down firmly and evenly, going up the sides a little. Set aside.

For the filling

  • In the bowl of an electric mixer with the whisk attachment, or using a handheld mixer, beat the vegan cream cheese until smooth, about 1 minute.
  • Now add the rest of the filling ingredients and beat until smooth, scraping down the sides and bottom of the bowl as needed.
  • Once it’s completely smooth, pour into the prepared pan over the crust and spread evenly.

To bake

  • Place in the oven and bake for 50 minutes. Do not open the oven door during this time. Turn off the heat, and let it sit in the oven for 10 more minutes. The cheesecake will be slightly jiggly and not look very done in the middle. That is correct, it will firm up when it cools.
  • Remove from the oven, and let it cool for about 15 minutes at room temperature before moving to the refrigerator to cool for at least 4 hours, preferably overnight, before slicing and serving. When ready to serve, slice and serve with any optional toppings.

Optional fresh strawberry sauce

  • In a food processor, add 1 1/4 cups of the sliced strawberries (reserving 1/4 cup), sugar, and lemon zest. Process until smooth. Toss with the sliced strawberries in a small bowl and chill for at least an hour before serving.
  • Storing: Leftover cheesecake will keep for up to 7 days in the refrigerator. It can also be frozen.
