School’s out for the Summer!!!

If you are new to the area, you will find plenty to do around here throughout the Summer. In June, there are several Farmers Markets that are starting up for the season including the Palisade Market, Cross Orchards and Fruita market. There are a few others that will also open as the season progresses including the Downtown Farmers Market (July) as well as the numerous other fruit and vegetable stands located throughout the valley. We are fortunate to be able to live in this agricultural mecca, enjoy the fresh produce and also know that each purchase that we make from the local farmers are helping to support the many families that work incredibly hard throughout the year to make this all possible.

Our team has been very busy getting ready for the Summer selling season as well as donating their time for special events and non-profit fundraisers. One big event that will be coming up in October is the Grand Junction Air Show. We are proud to be a part of the sponsors that are hosting the Veteran’s tickets for this upcoming show. Veteran tickets are only $15 each and we will be happy to assist you or your family members with the tickets. Please reach out to one of our Shafer Team agents or call the front desk at 970-243-0456 and they will be happy to assist.

Happy June Everyone!

Happy June everyone! It is officially summer! This warm weather is the perfect time to get outside and be active. There is no better place than the Colorado National Monument to get your Summer started. The Monument has over forty breathtaking trails and this month, I will tell you about some of my very favorite trails to explore.

First of all the Devil’s Kitchen Trail is a quick mile long trail with lots of fascinating rock features. In fact, it is so well known in the area that CMU named the restaurant in the Hotel Maverick after it. The Devil’s Kitchen Trail is an easy hike up to a gorgeous rock formation and I would definitely recommend this breathtaking trail for the entire family…young and old alike.

Next up is the Serpents Trail, also called the “crookedest road in the world”, is about three and a half miles round trip. It is a cool experience, and good for kids. It is an uphill climb to the top (not too difficult), but it has a wide trail and lots of beautiful scenery. It is truly something you won’t forget.

The third trail in the Colorado National Monument is the Independence Monument Trail. This trail is about five miles out and back. It is one of the more challenging hikes but this trail is a marvelous sight. There are many exotic plants and stunning rock formations that are definitely a must-see in the Grand Valley. You might also get to see the Desert Bighorn sheep that frequent this area.

The last trail featured for this month is the Mica Mine Trail. This trail is actually located just off of Little Park Road in the Bangs Canyon area. This family fun trail is considered easy as it is about two miles there and back. This is a great adventure for kids with lots to see and at the end of the trail is a magnificent cave filled with mica and granite! It is a beautiful trail with lots of shade and sights to entertain the entire family.

The Colorado National Monument and surrounding area has many amazing trails for you to explore, so start the Summer off right and go see them! Have a spectacular June and relax.

Until July, Kenzie.

Easy Banana Pudding Cheesecake

With its rich flavor and subtle sweetness, this Banana Cream Cheesecake puts a simple, creamy twist on classic banana pudding. A bit of extra crunch from the light and buttery no-bake crust adds a satisfying complexity to the texture, making this treat versatile enough to fit any occasion. This creamy no-bake cheesecake makes the perfect summer dessert! With a buttery Nilla Wafer crumb crust, this recipe takes classic banana pudding and gives it a little more structure, making it an ideal item for bake sales or book clubs. It’s quick to whip up, with no baking required, but still elegant enough to impress your friends when you set the plate out on the table.

Campfire Peachies

We have a few traditions when heading to the cabin and one of those is roasting marshmallows over the fire to make yummy S’mores. Jude adores this tradition and so do I! S’mores are one of my favorite treats when sitting by the campfire. Now most of you know that I am on my last Weight Loss Journey right? Well this trip the cabin was a challenge, especially when it was S’more time. I didn’t want to deprive myself of one of my favorite treats but knew I could make the gooey treat a bit healthier for me. I decided to create a Campfire Peachie Treat instead. They are so yummy and super easy too. I think this could become our new campfire tradition at the cabin too!
