Small Business Spotlight - Holly's Meat Pies | |
|
If you happen to be in Whatcom County, Washington, and you're looking for a quick, hearty meal, a meat pie or pasty (pronounced "pass-tee") might not be your first thought. But check out the menu at Holly's Meat Pies in Bellingham! Originating as Cornish pasties, these were practical lunches that miners in 19th-century Cornwall would take down the mines each day. The pasties are self-contained and filling, perfect for the long, hard work hours they performed each day.
Holly Bevan-Bumford, owner of Holly's Meat Pies, has combined family recipes with amazing PNW farm-to-market ingredients to bring back the pasty. She uses a state-of-the-art kitchen capable of preparing meals for 200 people, whether at work or at home with the family. Visit her storefront location in Bellingham, where you’ll find several flavors of pasty available, including a couple of rotating specials—all packed with beautiful ingredients and made completely from scratch.
"Having raised kids and known what it was like trying to get them to their events and to school, I thought it would be cool to have something that was a healthy, hearty meal that wasn’t just pizza," Holly remembers. "Love pizza, but you don’t want it every night!”
Originally from Michigan, where pasties are still a much-loved meal, Holly turned to her roots when starting her own business in 2012. Along the way, the business has evolved, but one thing that has always been consistent is her emphasis on locally sourced, high-quality, organic ingredients—not only for tremendous flavor but also because she feels this is an important responsibility to her community.
"I grew up on a small hobby farm, spent some years around a dairy farm, raised goats and horses, and did 4H and FFA—which all gave me a unique perspective on farming." Keeping this perspective, Holly has worked with many local farmers over the years, who have supplied everything from beef, cheese, and carrots to onions and rutabagas. "I tell folks that the reason my pasties taste so great is because we use the best ingredients," Holly says. "Much of the year, these organic vegetables come from local sources or the Community Food Co-op in Bellingham."
Holly, her team, and these pasties = Another top-quality small business in Whatcom County and the PNW. And soon, they’ll be able to ship as well.
