Bumpin’ Cool Summertime Bruschetta
Ingredients
  • 2 pints of cut cherry tomatoes 1 red and 1 orange or yellow
  • 1/4 cup shredded Parmesan cheese
  • 2 cloves garlic, minced (about 2 teaspoons) add more to taste if you love garlic!
  • 1 teaspoon extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1/3 cup (8-10 large fresh basil leaves) thinly sliced* or chopped
  • 3/4 teaspoon sea salt, more or less to taste
  • 1/2 teaspoon freshly ground black pepper, more or less to taste
  • 1 baguette French bread or similar Italian bread

This bruschetta is great for summertime parties since it’s light, cool and refreshing. Serves 6-8. Double ingredients for more. 20-30 min prep and cook time.

Instructions
  • Use any flavorful, ripe tomato for this recipe and blanch, but this recipe is easy peasy with cherry tomatoes you don’t have to blanch. If you use cherry tomatoes, just cut them in half then quarter each half, don't bother blanching or peeling them. Thinly slice basil leaves by stacking the leaves on top of each other and roll up like a cigar. Then make thin slices from one end of the basil cigar to the other.

  • Toss cherry tomatoes, garlic, olive oil, balsamic vinegar, basil, parmesan cheese, salt and pepper in a medium bowl and stir ingredients together. Ideal to let marinate at least 30min-1hr.

  • Toast the baguette slices: get oven warming to 450°F. Using a bread knife slice the baguette diagonally 1/4” thick. Spray baking sheet with a good coating of non-stick spray (olive oil or butter flavor preferred). Lay all the pieces down and spray top side of slices as well. You can brush olive oil on each slice instead of spray if you prefer. Bake 4-6 minutes until lightly browned around the edges. Shorter time for softer bread.

  • Serve toasted bread with tomato mixture in separate bowls and let folks pile as high as they like. Enjoy!
