Deanna’s Grilled Cauliflower Steaks with Tahini Mustard Sauce
Ingredients:
For steaks:
  • 1 head of cauliflower
  • Olive oil
  • Steak seasoning
  • Salt
  • Pepper

For mustard sauce:
  • ½ cup tahini
  • 2 tablespoons of Dijon mustard
  • 1 large clove of garlic, minced
  • ¼ cup of water
  • juice of one lemon
  • salt & pepper to taste

Instructions:
  • Clean the cauliflower and remove the outer leaves. Cut the stem short
  • With stem side down, slice the cauliflower into 1 to 1 and ½ inch slices to get 3 or 4 nice size steaks depending on the size of the cauliflower. (There will be some leftover florets from the ends – save these to add to a salad for your next lunch)
  • Season the steaks on both sides with olive oil, steak seasoning, salt and pepper
  • Place on a preheated grill and indirect heat
  • Grill for 7 - 10 minutes on each side over indirect heat
  • For sauce, whisk all the ingredients together until smooth – add more water for a thinner sauce

Alternate cooking method:
Place the steaks on a cookie sheet and roast in the oven at 375 degrees for 20 minutes, turning after 10 minutes. Brush half of the Tahini Mustard Sauce and continue roasting for about 10 minutes. You can also use garlic hummus as an alternative to the sauce, if you prefer. When steaks are done, drizzle with remaining sauce or hummus.
Rembo Chili
Ingredients
  • 5 Bacon Strips - diced
  • 1.5 lbs Ground Beef (90/10 sirloin is best)
  • 1.0 lbs Ground Italian sausage - out of casing (hot is best, but sweet Italian is good, too)
  • 1 large White Onion - diced
  • 4 cloves Garlic - diced 2 tbsp Chili Powder
  • 1 tbsp Oregano
  • 1 tbsp Ground Cumin 1 tbsp Paprika
  • 1 tsp Crushed Red Pepper 1 tsp Black Pepper
  • 14 oz can Diced Red Tomato 8 oz can Tomato Sauce
  • 4 oz can Diced Green Chilies
  • 2 can Pilsner Beer (12 oz Chicken Broth works for gluten-free)
  • 2 Bay Leaves
  • 1 tsp Vinegar
  • 2 x 15 oz cans of Kidney Beans Olive Oil

Instructions
  • Dice 5 strips of bacon into fine pieces. I like to put on wax paper and freeze for easy chopping
  • Heat 2 tsp olive oil in your 4-quart or larger pot. Cook bacon bits until fat is rendered and it is slightly browned
  • Add sausage to bacon and cook until slightly browned
  • Add onion, garlic and spices. Cook approximately 5 minutes or until onions begin to soften
  •  Add ground beef and stir in with one of the beers. Crack the second beer for yourself because the hard parts are done
  • When beef is cooked, add diced tomatoes, tomato sauce, chilies, bay leaves and vinegar. Stir together and bring to boil for a few minutes
  • Lower heat and simmer for 30-minutes
  • Add beans, stir together, and simmer for another 30-minutes
