Raised in the fjords of Norway, these trout look similar in color to salmon, but are actually rainbow trout that evolved to leave fresh water and go out to sea. We love it baked with a nut crust ( pecans or almonds are yummy) or sauteed and topped with one of Jaime's fresh pestos. Wonderful with some of the Wild Rice with Dried Cherries.

TRY SOMETHING NEW & WONDERFUL: BRANZINO
Known in France and the British Isles as Loup de Mer (wolf of the sea) or European sea bass, branzino is the Italian name for the same fish. Because the ancient Greeks considered it the smartest of all fish, as it was the most difficult to catch, it was dubbed the wolf of the sea. It's also carnivorous, eating shrimp and shellfish, which is why it tastes so good.  
     O urs is wild caught, but branzino is also one of the most successfully farmed fish in Europe. If you've never tried it, we couldn't recommend it more - mild, firm and nutty-flavored, it lends itself to simple preparations, such as a quick saute in olive oil and topped with herb butter or some of our Lemon Dill Sauce. Also great baked with a sprinkling of dried herbs - ask us for suggestions. 
A perfect choice for Lent -- the whole family will love this fish!

     In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess:
