3 lbs. Mixed Nuts
2T Honey
2T Olive Oil
1T Paprika
1t Cumin
1t Cayenne

Smoke nuts for 30 minutes at 190°F in your SmokinTex smoker.

Mix 2T honey, 2T olive oil with smoked nuts.

Mix in 1T paprika, 1t cumin, 1t cayenne, salt to taste.
Keep some for your self and give away to friends and family! Inexpensive locking Ball Jars filled with smoked nuts makes a great gift.

Enchilada Sauce-Yields 4 Cups
2# tomatoes, quartered 
1 large onion
1 jalapeño 
4 cloves garlic
3 dried guajillo peppers
1 green pepper 
1 cup chicken stock
½ cup fresh pineapple (for sweetness, can be omitted or substituted with canned)
1 Tbsp honey, if desired
Salt and pepper
2 Tbsp oil
2 tsp ground cumin

Rub potatoes with olive oil, smoke at 250°F for 3 to 3 1/2 hours, or until tender. Leftover smoked baked potatoes, peeled and cubed, are great for: hash browns, potato salad, mashed potatoes, potato soups, & chowders.
Try different woods. Hickory is great! So is cherry and apple. You will love these potatoes!

BBQ Beans - Smoker Style

3 53 oz. cans Van Camps Pork and Beans
1 lb. of bacon (cut into about 1" pieces)
2 medium onions ( diced )
1/2 cup brown sugar
1/2 cup yellow mustard ( I use French"s )
1/2 cup of your favorite BBQ sauce ( I use Sweet Baby Ray's)
1/2 cup molasses
You can also add in some chopped leftover shoulder, brisket or hot links.
