                                                   Seems like that is wrong, somehow. We need as many years as we can get so the years should sloooowwww dowwwwn as we get older, not speed up!
                                                   
                                                   I personally have so much for which to be thankful and grateful. 
                                                   
                                                   In my professional life, I am grateful for a wonderful business, great clients, amazing employees, dependable vendors and fantastic support staff -- Marty, Amanda, Lynda, and Rachel -- thank you for making my life so much easier!
                                                   
                                                    
                                                     In my personal life, I am thankful and grateful for my fiancé Dan, the type of honorable man with a strong character I gave up hope ever of meeting, my daughters, son-in-law's and grandchildren. All healthy, smart, and successful. How did I get so lucky?
                                                   
                                                   As always, I am on a health kick -- finally to drastically improve my health so I can be around as long as possible with my family. As of this writing, I am down 50+ pounds and feeling healthier than ever.
                                                   
                                                   A great deal of this health improvement is due to eliminating carbs and sugars, which my body seems to love and is extremely efficient at saving so I just have to say 'no' to these types of foods.
                                                   
                                                   Today I'd like to share a few of my favorite Thanksgiving tips and recipes for the health conscious:
                                                   
                                                   Mini Low Carb Pumpkin Pie Recipe is perfect for those on a low carb diet and those who don't want to miss out on pumpkin pie or those amazing pumpkin pie aromas.

                                                   Ingredients
                                                   
                                                   1 can (15oz) pumpkin puree (just pumpkin) 1 cup almond milk, unsweetened (or other milk substitute)1/2 cup Swerve sweetener or sugar  
                                                      2 large eggs 1 1/2 teaspoons pumpkin pie spice 1/2 teaspoon cinnamon 1/2 teaspoon vanilla whipped cream topping (optional)  
                                                   
 
                                                   Instructions
                                                   
                                                   Preheat oven to 425F degrees.In a large bowl whisk eggs to break up. Add the pumpkin, almond milk, sweetener, spices and vanilla and whisk to combine until nice and smoothDivide mixture into 6 sprayed ramekins.Bake for 15 minutes in the 425°F oven.Then lower oven temperature to 350F and continue to bake for 45 minutes.Let cool for 1 hour.Add whipped topping or refrigerate if you prefer it cold (we do!) 
                                                   
  
                                                   
                                                     
                                                      FYI, nearly all grocery stores (and Trader Joe's) offer coconut milk based spray-able whipped cream. It is delicious and only 10 calories for two (2) tablespoons. Can you say 'yummy'? I put it on sugar free chocolate pudding and if I were to add chopped pecans, I'd swear it tastes the same as Marie Calendar German Chocolate pie.                                                       For a colorful and beautiful contribution to your Thanksgiving dinner, why not make a Turkey Veggie tray?                                                     Once the veggies are prepped, putting it together is quite simple and only takes a little longer than a standard veggie tray. Red-leaf lettuce, celery, baby carrots, and asparagus spears make up the tail. 
                                                    
                                                    
 
                                                    Note: Blanching is required for stronger vegetables so you can tolerate them (mostly) raw. This includes asparagus, broccoli, and cauliflower among others. To blanch a vegetable: plunge the vegetable into boiling water for a minute or two and then immediately into a bowl of ice water to stop the cooking. 
                                                    
                                                    
 
                                                    The body is red, yellow, and green peppers that have been halved lengthwise and then sliced.
                                                    
                                                    
 
                                                    The breast is sliced cucumber; the head is a yellow squash and is held in place by the cucumbers and some grape tomatoes.
                                                    
                                                    
 
                                                    The eyes are black olive slices, the beak is a triangle from the yellow pepper, and the waddle is a slice of red bell pepper.
                                                     The face pieces are held in place by toothpicks that have been cut in quarters (only used the end pieces that have points). The feet/legs are celery sticks that are cut into "toes".
                                                    
                                                    
 
                                                     
                                                      You can do the same thing with fruit!
                                                    
                                                    
 
                                                    For a simple centerpiece, consider popcorn votive candles. Originally from theyummylife.com you can 
                                                      use regular grocery store popcorn or purchase rainbow popcorn. You can get votive candles anywhere including Michaels, JoAnn's, Smart and Final, and the Dollar Store which also has a variety of glass bowls available. 
                                                    
                                                    
 
                                                    Add some small pumpkins, dried leaves, nuts in the shell and/or dried corn and you're all set!
                                                    
                                                    
 
                                                     
                                                      And finally, there are dozens of cheese ball recipes -- many of which I've made over the years. One of my most favorites includes dried beef and dill pickles! No matter which cheese ball you make, dressing it up as a turkey will add a little fun to your Thanksgiving table!
