Saturday's weather is looking a bit iffy, but we'll be there, rain or shine. And today's update is chock full of seasonal recipes that celebrate all the winter veggies, fruits, cheeses and pasture raised meats you'll find at the market this weekend. Our vendors are stocked with tasty holiday gifts and we're offering free gift wrapping at the EFM Merch Tent, not to mention a t-shirt sale, since temps are gonna be soaring into the sixties (what?)! And don't forget you can find the Easton Ornaments for sale at the merch tent too.

Butternut Squash Casserole

With butternut squash, sweet juicy apples, creamy gruyere cheese, spicy Italian sausage, and fennel, this hearty, flavorful casserole is a celebration of seasonal flavors!

Note: The recipe calls for Honeycrisp Apples which are no longer in season. Pink Lady apples are a great substitute for Honeycrisp. Or use whatever your favorite apple is!

This week's organic apple feature is the granny smith. Except this isn't just your typical grocery store granny smith! Our granny smith's are bright green with a pretty pink flesh, juicy, crisp, and tart with a little sweetness. Lovely for a pie or eating fresh!

The full line-up includes lettuce mix, arugula, spinach, kale (green curly, tuscan), Swiss chard, scallions, red beets, carrots, hakurei turnips, green cabbage, napa cabbage, pak choy, parsley, butternut squash, and apples.

Hand-decorated holiday decorations sold out quickly last week at Phillips Farms, but there will be plenty more this week. Fresh eucalyptus is still available but winding down for the season.

Tis the season of cooking over an open fire. Cabbage Throw Farm honeynut squash and Bok choy are delicious roasted over a fire (or in the oven). Simply brush with olive oil and sprinkle with salt. Or blend fresh cilantro and parsley with garlic, olive oil and lemon juice to drizzle over roasted Bok choy. Other great roasting veggies include beets, carrots, turnips, specialty radish and kohlrabi. Cabbage Throw Farm will also have lots of head lettuce, romaine, salad radish and turnips, spinach, Tatsoi, napa cabbage, dandelion greens, parsley and more.

Mountains and mountains of mushrooms are coming to market! You'll find everything from Lion's Mane to Pioppinos but it's the Chestnut mushroom that's in the spotlight this week. The Chestnut is similar to a cremini but prettier and more flavorful. This beautiful rustic brown colored mushroom grows in large bountiful clusters. Use the entire mushroom - both cap and stem maintain their crunchy texture even after cooking. And they don't shrink as much as cremini mushrooms, making them the perfect choice for this Chestnut Mushroom Beef Bourguignon

The Gold Rush apple is derived from Golden Delicious as the seed parent, with crosses from several other varieties including Winesap, Melrose, and Rome Beauty. Say what?!
If you've found cream cheese a bit hard to come by lately, you're not alone. Yesterday the NY Times reported that this latest supply chain issue has hit the famed bagel shops of the Big Apple. And foodies in Philadelphia have been feeling the pinch for weeks.

Well, here's where your local farmer comes to the rescue! Behold Philly Fromage - a delightfully creamy fresh schmear created by Haven Farmstead Table. Philly stores have been buying up this local cheese like crazy, but fear not, there's still some left for Easton!

Raspberry Ridge Sheep Creamery
Rob will be featuring St Marks cheese this weekend. St Marks is a soft cheese with a bloomy white rind. It is similar to a brie or camembert but is more tart making it an excellent companion to fruit, honey or a holiday cheese tray.

Rob will also have manchego, gouda and baby blue cheese. And his sheep milk yogurt and spreadable cheeses.

MayaMam Weavers

Mayamam Weavers creates handwoven home goods and accessories, inspired by the rich colors and patterns and traditional weaving techniques of Mayan culture.

MayaMam began in 2008 as a cooperative of women in Cajolá, a Mayan town in the western highlands of Guatemala. To overcome poverty, the women came together to explore ways to provide jobs within their community, rather than migrate to the U.S. and separate their families. Since then, then cooperative has grown to 20 weavers and seamstresses, all earning fair trade wages while learning the skills to run a business. It also provides on-site childcare and adult literacy classes for the community. Mayamam Weavers in the U.S. is based in Morristown, NJ. See more
Lafayette Pottery Club
The Pottery Club at Lafayette College will be selling their handmade pottery pieces at the market this Saturday. All of the proceeds will benefit the Second Harvest Food Bank of the Lehigh Valley and Northeast Pennsylvania.
