Pumpkin Bread with Cream Cheese Frosting

1/2 cup butter

1.5 cups sugar

7.5 oz. pumpkin puree

2 eggs

1/2 cup water

1.75 cups flour

1 tsp soda

1/4 tsp salt

1/2 cup nuts, chopped

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

1/8 tsp ginger


Cream butter and sugar. Add eggs, water, and pumpkin puree. Sift dry ingredients, then add all together and mix.


Bake in a well-greased and floured loaf pan at 350 degrees for 1 hour or until done.


Cream cheese frosting:

4 oz softened cream cheese

1/4 cup (1/2 stick) softened butter

2 cups powdered sugar

1 teaspoon vanilla extract


Mix together until smooth. Frost top of cooled (minimum 1 hour out of oven) pumpkin bread, and enjoy.
