Employee Spotlight: Michelle Mortenson
|
Michelle Mortensen, Title Policy Typist at Cowlitz County Title, works with the title and escrow departments to accumulate the end result of the process, “The Policy”. Michelle has five years of experience in the title and real estate financial industry. She believes work comes first and is committed to providing excellent customer service.
Michelle enjoys spending time with her grandkids, camping, riding quads, family gatherings, cuddling up next to a fire, and watching movies. Her favorite local restaurants are El Ranchero and Hop-N-Grape. Michelle and her husband, David, live in Longview. She enjoys day trips to Long Beach and the excitement of a Hellgate jetboat excursion on the Rogue River in Grants Pass, Oregon when on vacation. 1 lb boneless skinless chicken thighs
1 small onion
2 carrots
2 celery sticks
Peanut Sauce:
1/4 cup creamy peanut butter
1 Tbsp soy sauce
1 Tbsp karo syrup
1 tsp cayenne pepper
1 Tbsp lemon juice
1/4 cup water
In a wok, cook chicken thighs and set aside. Sauté diced onions, carrots and celery in olive oil. Combine cooked chicken to vegetables or plate separately and add side of peanut sauce. To prepare peanut sauce, place sauce ingredients in a bowl and bring together with a wire whisk. Enjoy with a side of your favorite rice.
