Good Afternoon!

Several years ago The New Yorker printed a cartoon of one dinosaur looking at another as an ark was moving off into a sea of water and asking, “Was that today?” There’s a reason we call coal, petroleum, and natural gas and gas shales fossil fuels. They developed as the result of geologic processes acting on organic matter.

Rather than looking to a green future, Texas, for instance, passed a law boycotting investment firms that look to green energy rather than its own fossil fuels. New Jersey, on the other hand, is a leading supporter of green power, including wind. We have a major wind farm project from Ørsted, a Danish company, which has the potential to power half of New Jersey’s homes. And that’s just the beginning.

We can have a green future, one that respects life from the sand crabs on our Atlantic shores to the magnificent whales in our seas. Ørsted also has wind farm projects in other states, including Texas, in spite of the Neolithic thinking of its legislature.

Weekend in Old Monmouth
Thank you to all who stopped by historic Old First Church during the annual “Weekend in Old Monmouth.” A Weekend in Old Monmouth is an annual two-day event when 49 of the Monmouth County history sites open their doors to visitors. Pastor Joyce gave tours of the church grounds and graveyard. Elaine Lent was on hand to describe the historic patchwork quilt on display in Fellowship Hall. Artwork by locals will be on display and for sale in Fellowship Hall till the end of May.
I visited your Church on Saturday during the Monmouth Tour. It was wonderful! I learned so much and the woman who I chatted with was amazing [Elaine Lent]. Thank you for this opportunity to visit your Church. I have driven by so many times and it was an honor for me to be able to learn and enjoy our history and the history of your Church. The cemetery was treasure trove of history too!

BEST GRILLED CHEESE SANDWICH! - Aged Gouda Grilled Cheese, Pepper Jelly & Caramelized Onion
Sweet buttery caramelized onions and pepper jelly dress up the classic grilled cheese sandwich.

  • 1 sweet onion (Vidalia or Walla Walla) sliced thin
  • 4 tablespoons of softened butter, divided
  • 1 tablespoon of sugar or honey
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper
  • 1 cup of Aged Gouda (preferably 5 years plus)
  • 4 slices of fresh bakery bread

  1. Heat two tablespoons of butter in a medium sized skillet
  2. Thinly slice onion and add to the pan, stir in sugar and balsamic vinegar, season with salt and pepper
  3. Cook onions over medium low heat until caramelized, about 40 minutes
  4. Butter one side of each slice of bread, layer grated cheese and caramelized onions
  5. Cook sandwiches over medium heat until browned and crispy on both sides and cheese is melted, 5-7 minutes per side
  6. Slice on a diagonal and serve with soup or salad

Elaine Lent is showing rapid improvement and is up in her wheelchair doing all kinds of things, such as fixing her own meals and doing her own laundry. These sound like little accomplishments but they are meaningful in the road to recovery.
