In a large nonreactive saucepan, combine the octopus and ½ cup of the vinegar. Add water to cover and bring to a boil over low heat. Cover and reduce heat to very low.
Simmer for about 45 minutes, or until the octopus turns deep pink. Don't overcook, or the octopus will become rubbery.
Drain, put the octopus in a bowl, let cool.
The octopus is now tender and ready for either the BBQ Recipe or the Marinated octopus recipe.
(Once cooked properly, the octopus will look like this and will be tender. You can also put it on a medium temp. BBQ and give it a smoky flavor. Just add salt and pepper and enjoy!! )
Grilled Octopus Recipe
To Grill or BBQ your Octopus simply add 1/3 cup olive oil and the juice from one lemon to the bowl, along with Lawry's Galic Salt and pepper and any other spices or herbs you prefer.
Toss the whole octopus legs and pieces to coat with the oil mixture. Let set for 30 minutes or overnite. TO GRILL - Put on a medium - hot BBQ - be sure to brush the grill with oil.
Turn every 3 minutes, brushing with the oil and lemon mixture, until the octopus is charred, like a good steak. ( about 10-12 minutes total) This item will be the HIT of any summer grilling party you have - I guarantee it!!

Let cool, then cover and refrigerate for 1 or 2 hours to chill.
