Grilled Tuna
with Herb Butter

Quick, easy, and healthy, our grilled tuna recipe can be prepared in just under 20 minutes. Drizzle olive oil and lime over the tuna before grilling it for a zesty flavor.
If you don't have a lime on-hand, a lemon makes a nice substitution. The freshly
made herb butter is the secret ingredient in this grilled fish recipe that also tastes great drizzled over the spinach. It's a tasty way to flavor steamed or grilled vegetables, too.
Ingredients
  • 4 sprays cooking spray
  • 1 lb uncooked yellowfin tuna, 1 steak (1 to 1 1⁄2 inches thick)
  • 1 tsp olive oil
  • 1 tsp fresh lime juice
  • 2 tbsp salted butter, softened
  • 1 tbsp chives, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh tarragon, finely chopped
  • 1 tsp lime zest
  • ¼ tsp table salt
  • ⅛ tsp black pepper
  • 1 lb fresh spinach, rinsed but not dried

Instructions
  1. Off heat, coat grill rack or grill pan with nonstick spray. Preheat a gas grill or grill pan to medium-high, or prepare a medium-high fire in a charcoal grill.
  2. Drizzle both sides of fish with oil and lime juice. In a small metal bowl, combine butter, chives, parsley, tarragon, lime zest, salt, and black pepper.
  3. In a large saucepan, cook spinach, covered, over medium-high heat until leaves are wilted, about 2 minutes. Remove from heat.
  4. Grill fish, turning once, until charred in spots and cooked to desired doneness, about 3 minutes per side for rare. Place the bowl with herb butter directly on the grill and let sit just until butter melts.
  5. Thinly slice fish. Divide spinach among plates and arrange fish on top. Drizzle melted herb butter over fish and spinach.
  6. Serving Size: about 3 oz tuna and 1⁄4 of spinach.

Notes
  1. You can cook the tuna on a grill pan in the broiler, if you prefer. Tuna is prepared like steak in this recipe — cooked in one large piece on a very hot grill. If you like your tuna more well done, add about 1 minute to the total cooking time. But tuna cooks fast so make sure not to overcook it. The herb butter topping is great on both the tuna and the spinach. Use a lemon if you don’t have a lime on hand.
