We are going to have a party/cooking class/seafood blowout on Tuesday night, April 2nd. This will be after we close and Terry and I will be offering a buffet  of 10 of our favorite seafood dishes from the last ten years. We will be demonstrating and cooking a few of these dishes during the party.

When aspiring to exceptional culinary standards,

not all salmon are created equal.

We had a chance to sample one of these prime King Salmon last week and I was impressed right from the start. When I opened the box, the fish looked like it had just come out of the water, it was that fresh looking, clear eyes and red gills. I put my knife to the salmon and under the glistening silver skin lay some of the finest red marbled flesh I've ever seen. The fat content is phenomenal.  I couldn't wait to cook it and had a slice right then and there, it's not called  the Waygu of salmon for nothing! Later, hot off of a cedar plank, it just melted in my mouth. Granted, the flavor isn't as full as wild King will be but I have to say this was the best farmed King salmon I've tasted yet.

The story gets better, talking with the rep from the farm I was impressed on the quality of the farm and their practices. Here is a link to their website, you really need to check out their operation.

Ora King salmon is the best of our unique breed of King salmon, nurtured throughout their life cycle to ensure the finest result.      

New Zealand has some of the world's strictest environmental regulations protecting our waters and the salmon we farm. Ora King farms are isolated in the pristine waters of the Marlborough Sounds and we are able to raise healthy, full-bodied fish without the use of antibiotics, chemicals, hormones or vaccines.

New Zealand King Salmon is at the final stage of obtaining the world-leading Best Aquaculture Practices (BAP) certification from  

The Global Aquaculture Alliance.

In addition, King salmon are not native to New Zealand and there are no wild salmon in the Marlborough region in any significant number. This allows us to raise Ora King salmon without any impact on wild stocks of salmon.

Salmon farming in New Zealand is one of the most sustainable ways of producing animal protein.

  King salmon has the highest natural long chain Omega-3 content of all salmon. This also greatly reduces the risk of over-cooking as the higher oil content keeps the salmon moist.

The bottom line is you simply have to try this salmon and I want you give me your opinion. I don't think there is a better place for me to source this as the best farmed King salmon.

FRESH SEAFOOD OPTIONS
Lobsters live with seaweed
What's up with lobster prices? 
I have not seen live lobsters at these prices in my 40 years in the business! There is an end of the season shortage with dwindling stocks in the lobster pounds and boats not being able to fish new lobster due to ice and weather. The issue should resolve itself sometime in mid April(I say with fingers crossed).
In the meantime, one and one half pound lobster are now retailing for $25.00 lb and I'm not even carrying any larger sizes until we see a price drop. This also effects our fresh lobster meat and our fresh lobster salad/lobster rolls.

The best bet is to wait on your lobster needs and plan another option for now, like king crab or shrimp.
I'll keep you posted when the price comes down.

The season is almost over, by the end of March these will be gone.

Nantucket scallops are best raw or just lightly sauted in a little butter with a splash of white wine, salt and pepper. They work well with any scallop recipe but really better just on their own  with minimal preparation.
