Starting with the A2 Guernsey Milk, Chef Ashley crafts a cream cheese. She then blends in our farm eggs, organic sugar, and fruit we preserved this summer. The result - a cheesecake as it should be with the slight acidic tang of homemade cream cheese, the sweet and malty notes of raw sugar, the unadulterated goodness of ripe fruit, and the crunch of the chocolate chip cookie crust.

Not going to enjoy it until Christmas or New Years? Or just want to share? Freeze immediately then thaw 1 day before serving.

Smoked Holiday Ham

We take pride in our ham. We start with making a brine balanced with salty and sweet, bringing in the malty characteristics of sorghum and the salty brine of sea salt and kosher salt.

Brining a ham is part science. We have to calculate our brine by the weight of the ham and how much we want to inject it. We then do a "capillary" injection to help the brine spread to all parts of the muscle. Then we vacuum tumble....yep, it's a lot of work.

After we tie the hams, then the fun part. Smoke them. Hams are then smoked for 16 hours for a tender, smoky finish.

Hams are sold by the Shank (approx. 6 lbs) or the Rump (approx. 10-12 lbs.). The weights are approximate, as it all depends on how large the hog was and how much fat was trimmed off .

Rutabaga
