Swedish Meatballs
1 lb pork and beef (1/2 of each)
4 Tbls bread crumbs
1 Tbls cornstarch
2/3 c milk
1 egg
1 1/2 tsp salt
1 tsp pepper
1 Tbls shredded YELLOW onion OR
2 Tbls finely chopped and sautéed
Butter (real) for frying.
Mix the breadcrumbs, cornstarch, and milk.
Let sit and swell at least 10 min.
Then mix in the egg, salt, pepper, and onion.
Add the meat and mix with a fork or your hands, but only until it's well blended.
It will get tough if worked too much.
Chill the mixture in the fridge for about 1 hour.
Roll into balls (keep hands wet so the meat won't stick to your hands).
Put on a wet plate, then fry in "REAL BUTTER" on medium heat until browned. Turn down the heat or put on a baking sheet and finish cooking in the oven.
