Hey everyone! How was your week? 3rd week of too busy for me, but starting to wind down a bit. I have gotten more clear on my 2016 goals and mission and it feels GOOD!! Speaking of are you all doing w your goals, new year resolutions, etc? If goo...CONGRATS! Keep it up! If not, I give you premission to RE-START tomorrow :)

I swam in a swim meet Saturday and they only had short races so it kicked my booty! No best times, but felt good to SHAKE THINGS UP and of course I had fun! Still working on my base training but getting ready to step it up next month!! YIKES...only 66 days until Oceanside 70.3.

I am  grateful for  the amazing second chance and opportunity I have been given with Pure Romance. I was feeling stuck and like a failure in Passion Parties the past few years and am excited to lead an amazing team of women through Pure Romance!!! <3

Easy Vegan Meal
Quinoa Creamy "Mac" and "Cheese"

This was SUCH a Throw Together Vegan meal!

- Quinoa (any version, mine happened to be black, there is also white, red, and tri colored. I don't know the diff, they all taste the same to me)
-Vegan Cheddar Cheese (I use Daiya because I can buy it almost anywhere these days and it melts well)
-Vegan Cream Cheese (I use Tofutti brand because they sell it at my little neighborhood store)
-Sea Salt

-Cook the Quinoa as directed (it's like rice but doesn't take as long...BONUS)
-Put the amount you want in a pot or microwaveable bowl
-Add a big scoop of cream cheese
-Add a handful of cheddar shreds
-Cook in pot or microwaver about 1 minute until all the cheese is melted
-Stir together, add salt to taste
-EAT! Yum!!

Workout of the Week...

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

Step Ups

This is a great exercise to work the entire lower body. AND you can do it pretty much anywhere you have a step. Like your stairs inside or outside, a park, or a gym! 

Do a workout by number of steps per set or by time (like 4 minutes). You should feel fatigued at the end of the set...and then repeat!!!


Toss it's FUN!

Toss it Tuesday started in January 2013 when we brought our new RV home and started to move our life into it.

Obviously, when you move from a 1,600 square foot home into a 37 foot RV, you have to get rid of some stuff.

It was easy at first, I would go through a drawer, cupboard, or closet each week and get rid of things we didn't need or want. In the first month we took 25 bags to Goodwill.

Then it started getting harder. We were down to the stuff we wanted, but we physically COULDN'T fit it all into the RV. For example, my clothes. I love my clothes. I bought them for a reason. I had an entire walk in closet to myself in the house and I took advantage of that and filled it up. Anytime I had an excuse to buy something fun to wear, I would. When I started moving my clothes into the RV, I quickly noticed they would totally fit...if I didn't have a husband, didn't need food, and didn't need the..or the couch. That was NOT the case.
