Hey Everyone... How was your week??? Other than ONE "low self-esteem day" full of too many rejections for my mind to stay on top of, my week ROCKED!!!

I also ran the Eerie Erie 10K on Halloween and had a blast! First run since the marathons and it felt great. 

Halloween night I dressed as Sandy from Grease...SUPER FUN!!!

Other than that I am on DAY 17 of my bike streak. In our I HEART BEING FIT group we are all picking a healthy streak to do for November so join us there!!

EASY Vegan Meals...

Raw Fettuccine Alfredo
Last week on RAWednesday, I came across this SUPER easy recipe that only took me like 10 mins to make! And was DELISH!! I will make it again tonight.


4 zucchinis
1 c cashews
3 cloves garlic 
1/2 c water
Juice from 1 lemon
pumpkin pie spice


Peel or spiralize your zucchini into noodles. I have a spiralizer (may try that tonight) but I peeled because they are more like fettuccine.

In a Vitamix or high speed blender, mix the cashews until they are powder. Add in water, lemon juice, garlic and blend until smooth. Add water to make the consistency you want. Add salt, pepper, and spice to taste. The recipe I found said nutmeg, I don't have nutmeg but had pumpkin pie spice and it was SOOOOOO good. I added maybe 3 shakes ;)

Pour the wet stuff over the zucchini and toss! EAT! YUM!!

Workout of the Week...RUN!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.


Two weeks ago I finished an amazing challenge. I ran 7 marathons in 7 days in 7 different states. My original training plan consisted of running 7 days a week with one long run (was training for a 50 miler too so the long run built up to 38 miles) and 3-4 days a week breaking up my short runs into "2-a-days" so I could get used to running on tired legs. Other than my long runs, my weekly mileage consisted of about 15-20 miles of running and 15-20 miles of walking.

Easy Ways to Eat Vegan...

I've heard about people who one day just decide to eat vegan and never touch an animal product again.

Those people are pretty darn amazing! I am NOT one of those people. It took me 10 years to become a vegan after I had declared that I wanted to stop eating eggs and dairy. I was already a vegetarian so meat wasn't an issue at all for was that darn cheese! And Saag Paneer!

But you know I am all about baby steps, so I want to show you some easy things you can start doing now to work toward eating a vegan diet...or at least eating cleaner and healthier than you do now.
