So, you are craving some great tamales!?
Legend/research has it that "Tamales originated in Mesoamerica as early as 8000 to 5000 BC. The preparation of tamales (corn masa steamed in a corn husk and usually stuffed with spicy meats and/or veggies) is likely to have spread from the indigenous culture in Mexico and Guatemala to the rest of Latin America," and now our entire country, but especially the west.
My favorite tamale is green chile with pork. I prefer tamales with equal amounts of the "stuffing" and the corn mush. Too often there's too little of the inside ingredients. So I smother it with a cup of my own green chile --made in the instant pot (pork, green chiles [12 anaheims], 12 tomatillos totally blended, hominy, cumin to taste, bone broth)-- and top it with a dollop of sour cream.
Making tamales is not easy! It's often an all day endeavor with a gathering of friends who love to cook, eat and share the love. For most of us, it's easiest to purchase the basic tamale.

Make a Wreath for the Birds
The holidays are usually a busy time in the kitchen—and birds will appreciate some home-cooked treats just as much as your friends and family. This suet bird seed wreath provides densely nutritious food for the
birds that hang around in the winter. Cook one up and hang it outside (ideally
either 3 feet from a window, or more than 30 feet from a window, to prevent collisions), and wait for your feathered fans to come snack. What birds should you expect? Suet is a particularly welcome feast for birds like wrens, chickadees, nuthatches, and woodpeckers.

Guided Elephant Seal Walks
Stroll over sand dunes on a moderate 3-mile, 2.5 hour hike with a docent naturalist to visit a large colony of Northern elephant seals. In the month of December, male elephant seals arrive and establish hierarchy, while pregnant females come ashore to birth to their pups.
These popular daily guided walks take place rain or shine, so be prepared for windy, rainy conditions as well as muddy trails. Layered clothing, sturdy shoes, and rain gear are strongly advised. Umbrellas and strollers are not permitted. Pets are not allowed in the park.
Tickets are $7 per person plus $3.99 reservation fee.
Vehicle day-use fee is $10. Reservations are strongly recommended. People with accessibility needs may reserve an equal access walk along the boardwalk.
