Celebrating Spring at the Farmer's Market!

Your local Farmer's Market is an incredible resource for accessing the freshest, healthiest, and most in-season produce, among other delights. The farmers harvest their produce mere hours before bringing it to the market. Many of these products are cultivated by California Certified Organic Farmers (CCOF), who have undergone a rigorous and stringent verification process ensuring that their offerings are free from inorganic pesticides or fertilizers. Notably, obtaining a CCOF label entails a more demanding application process compared to that required for the USDA Organic label. Most importantly, you'll immediately notice the superior taste of produce grown in season!

For this month's newsletter - I'd like to spotlight all things green! Spring is a time of more light, more sun, fresh growth, and lots of GREEN. Fresh and tender greens in many different shapes, paired with a light dressing, make for a delightful addition to any dinner table. Personally, I like a classic French vinaigrette for its ease of preparation and it's ability to compliment the delicate flavors of greens without making them soggy.

Enjoy the recipe below and the sunny days ahead!

Sabine
Spring Salad Recipe:

Mixed Greens
  • 1 part Wild Arugula (peppery)
  • 1 part Little Gem Romaine (crunchy), cut into 1-inch strips across the leaf
  • 1 part Frisée (curly endive)
  • 1 part Red Leaf Butter lettuce (delicate)
Green onion, finely sliced at an angle
Thinly sliced Fennel
Thinly sliced cucumbers
Slowly roasted pine seeds
Goat cheese and/or small croutons to top

Dressing: Classic French Vinaigrette
4 tablespoons olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste

Instructions:
  1. In a large bowl, combine the Wild Arugula, Little Gem Romaine, Frisée, and Red Leaf Butter lettuce.
  2. Add sliced green onions, thinly sliced fennel, and cucumbers to the bowl.
  3. Sprinkle with slowly roasted pine seeds and top with goat cheese and/or croutons.
  4. In a separate small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and Dijon mustard to make the Classic French Vinaigrette.
  5. Drizzle the vinaigrette over the salad just before serving and toss gently to coat evenly.
  6. Serve immediately and enjoy your homemade spring salad!
