Fats and Oils
In recent decades many health experts have challenged the conventional wisdom of dietary fats. Long standing ideas about which fats are good and which ones are bad have drastically changed. We've also been told that any fat at all is a major contributor to most chronic diseases. Remember the low-fat/fat-free diet fad of the 90s? What is the truth, and what do we need to know to be able to choose the best fat or oil for good health?

It is really a matter of
traditional fats versus industrial fats/oils.
But, first, what is traditional and what is industrial?
Industrial Oils
Created in the last century or so
Oils that cannot be extracted in a kitchen or by hand or with simple (no-heat, pressing) measures. Extracted in huge factories with damaging high heat and solvents:
  • Corn Oil
  • Rapeseed/Canola Oil
  • Cottonseed Oil
  • Soybean Oil
  • Grapeseed Oil
  • Rice Bran Oil
  • Safflower Oil
Traditional Oils
Naturally used from the beginning
These oils and fats are easily removed from seeds or fruit by "cold pressing" or other gentle methods.
  • Olive oil
  • Avocado Oil
  • Coconut/MCT Oil
  • Sesame Oil
  • Flaxseed Oil
  • Butter
  • Ghee
  • Lard
  • Tallow
  • Fish Oils

-Make sure oils and fats from animals are 'grass-fed'.
Here's Why
It Matters
Industrial oils are extracted using
high heat or pressure. This process denatures fragile oils and they become rancid. Rancid oils greatly increase a dangerous number of free radicals in our bodies, and free radicals are responsible for things like inflammation
and chronic diseases. Sometimes to make the oils look appealing after this process, toxic chemicals are then added to the rancid oils to deodorize and re-color them, adding to the toxic load.

From beginning to end, the process to get these oils into a bottle destroys any beneficial antioxidants and introduces very worrisome free radicals and downright unhealthy chemicals. They also further destabilize at lower heats when cooked with so choose heat-stable fats to cook with. If you are working toward better health, consuming these oils and fats are like taking MANY steps backwards. If you have a health issue where inflammation is involved, you will be especially interested in the affect these oils have inside our bodies. AND...they are in a LOT of products, so become an avid label reader. Also, because these are cheaper oils, almost ALL restaurants use these oils in their kitchens so if you eat out a lot, beware!

Traditional Oils
On the other hand, traditional fats and oils are extracted without dangerous chemical solvents and damaging heat. They are safe and stable at high heats and contain MANY health benefits such as unique antioxidants that fight free radicals. They are full of essential fatty acids, omegas 3, 6 and 9 (in proper ratios for good health), and they support healthy cholesterol levels. Even better, these very nourishing fats possess valuable fat-soluble vitamins such as D3, Vitamin A, Vitamin E, to name a few. These fat choices are real step forward in health!

If your fat comes from animals and the animal is grass-fed, your fat will offer you a higher anti-inflammatory omegas, conjugated linoleic acid (an anti-cancer compound), and a high level of fat-soluble vitamins and minerals that are lacking in the Standard American Diet.
