“Aunque no es un plato navideños tradicional, tengo vívidos recuerdos durante las fiestas de los quimbolitos. Los quimbolitos son pasteles dulces hechos de maíz que se cocinan al vapor, un esencial de la dieta andina por muchos siglos. El pastel tiene pasas en la masa, y se les envuelve en hojas de achira. Cuando yo era una niña mi familia y yo vivimos fuera de Ecuador por casi ocho años. Cuando regresábamos a Ecuador, muchas veces era durante las fiestas y mi abuelita preparaba platos ecuatorianos tradicionales. Los quimbolitos fueron uno de esos platos. Me acuerdo de ella en su casa en la Nochebuena, la cocina llena de gente con todos trabajando para preparar platos diferentes y uno de los platos que ella estaba preparando eran los quimbolitos.”
"I have very vivid memories during the holidays of quimbolitos, although they are not a traditional Christmas-time dish. Quimbolitos are steamed sweet cakes made from maiz, a staple of the Andean diet for centuries, topped with raisins, and wrapped in achira leaves. When I was a child, my family and I lived outside of Ecuador for close to eight years. When we came back to Ecuador, it was often during the holidays, and my grandmother would cook traditional Ecuadorian dishes. Quimbolitos was one of them. I remember her being at her house on Christmas Eve, a busy kitchen with many people working on different dishes, and one of the dishes she would prepare was quimbolitos."
