"I have very vivid memories during the holidays of quimbolitos, although they are not a traditional Christmas-time dish. Quimbolitos are steamed sweet cakes made from maiz, a staple of the Andean diet for centuries, topped with raisins, and wrapped in achira leaves. When I was a child, my family and I lived outside of Ecuador for close to eight years. When we came back to Ecuador, it was often during the holidays, and my grandmother would cook traditional Ecuadorian dishes. Quimbolitos was one of them. I remember her being at her house on Christmas Eve, a busy kitchen with many people working on different dishes, and one of the dishes she would prepare was quimbolitos."
