Date Bites with Nuts
makes 3 dozens

Ingredients for Salad

  • 3 cups raw nuts
  • 2 13-oz packs baking dates
  • 4 Tbsp honey
  • 2 Tbsp coconut oil
  • 1 tspn vanilla extract
  • 1 cup sesame seeds


  1. Preheat oven to 350°F. Place nuts and sesame seeds in separate trays and bake 10 to 12 minutes to achieve a light golden brown. Remove from oven and set aside to cool.
  2. Place cooled nuts in food processor to chop to desired consistency and transfer in a mixing bowl.
  3. Add the rest of the ingredients except the sesame seeds and mix by hand to make a paste.
  4. Using a #40 scoop or a spoon, divide the mix into 36 bites and coat with toasted sesame seed. 
  5. Place all bites on a tray and place in the freezer for 2 hours before serving or cover and keep frozen for later use.

Join us for our Virtual Courageous Conversations
The Compassionate Community Subcommittee continues to host Virtual Courageous Conversations. The events these past several weeks have disrupted our lives and challenged us in many ways, once again putting the spotlight on issues of racial equity and social justice. This subcommittee will continue to work together to ensure that we can provide the #RCcommUNITY a safe space for all voices to be acknowledged and heard. 
Through these community conversations, attendees are able to share in a judgement-free environment their lived experiences and perspectives on topics of race, racism and social justice. Through these dialogues, we hope to develop specific action plans tailored for our communities as we remain committed in dismantling any forms of racism and racial inequities in Rancho Cucamonga. The Compassionate Community Subcommittee meets regularly* every 3rd Tuesday of the month from 12:00 p.m.-1:30 p.m. Join us as we learn together and try to find a common ground in addressing these important issues, and identify practical and feasible solutions that foster healing and unity in our City.

We are here for you at our Monthly RC Community Check-ins
As a response to the need of more consistent mental health support groups in Rancho Cucamonga, Healthy RC partnered with the National Alliance on Mental Illness (NAMI) Pomona Valley to provide virtual community conversations called Community Check-ins. We encourage people to just grab a cup of tea and get comfortable at home, while logging on the Community Check-in safe space to share what’s on your mind.

Check-ins are scheduled on the first Monday of every month from 6:00 p.m-7:30 p.m. The purpose of this group is to share, listen, collaborate and learn from your fellow community members. NAMI Executive Director James Curtis facilitates and guides the conversation so that people can find the right tools, resources, and strategies to practice self-care and wellness. It’s that time of the year again! The City of Rancho Cucamonga has opened recruitment for middle and high school teens to join Healthy RC Youth Leaders. We are now accepting applications from youth ages 12-17 interested in making an impact in our community. Work on issues that matter to you and create the change to build a healthier community. 

Your voice matters and in Youth Leaders, you are a part of the policy-making process. You will gain leadership skills, team building skills, and most importantly, the confidence to use your voice to create meaningful change. This isn’t like any other leadership volunteer program around - you’ll actually get recognized and feel supported throughout your journey of becoming the incredible leader you are!
