COOL JICAMA AND CUCUMBER SALAD | |
Before summer ends, try jicama—a crunchy, root vegetable native to Mexico. Because the flesh is so porous, jicama picks up flavors well. Marinate it with citrus and your favorite spices or add chunks to a salad. Or make it the main component and use a tangy dressing to give it flair. Jicama goes great with greens, olives, avocado, hummus, lime, grilled fish, and roasted pork. It can be sliced thinly and added to a sandwich for some crunch or in place of a corn tortilla for tacos. Jicama supports healthy digestion and is high in Vitamin C and Vitamin B6. Try this fun summer-spring salad next time you're craving something fresh!
INGREDIENTS
- 1 Jicama Round (usually 0.5-1.5 lbs each)
- 1 Cucumber,
- 1 Lemon, seasonings of choice
PREPARATION
- Peel jicama root so that you only use the white part of the vegetable.
- Cut into thick french-fries-sized strips.
- Cut the cucumber into the same shapes, with the peel left on including the inside seed portions.
- Mix the jicama and cucumber then squeeze lemon over it, and season with salt and pepper to taste or Tajin. Serve chilled.
