HEALTHY RECIPE - LEMON LINGUINE AND ZUCCHINI | |
Looking for a delicious and wholesome meal? Try making a Lemon Linguine with Zucchini and Roasted Cauliflower - a perfect balance of zesty flavors and hearty veggies!
INGREDIENTS
- 1 (8 ounce) package of linguine
- 1 pound shredded zucchini
- 1/4 cup onion or shallot, minced
- 3 cloves garlic, crushed
- 1 tablespoon butter
- 1 cup plain yogurt
- 4 tablespoon freshly grated parmesan, divided
- 1/4 cup milk
- black pepper to taste
- 1/4 teaspoon salt
- 1 tablespoon fresh lemon juice
- 1 whole lemon, zested
- 2 green onions, chopped
- 1 cup tomatoes, chopped
- 1 pound cauliflower, chopped into bite-sized pieces
- 2 tablespoon oil, to coat
PREPARATION
Follow the video above for easy step-by-step instructions:
- Preheat your oven to 350°F. Toss the cauliflower pieces with olive oil, salt, and pepper. Spread them on a baking tray and roast for about 10-15 minutes, until tender and golden.
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions (10-12 minutes). Drain and place in a large mixing bowl. Drizzle with a bit of olive oil to prevent sticking.
- Heat a large pot over medium heat. Add a splash of olive oil or butter and sauté the diced onion and garlic until softened and golden.
- Dice onions and garlic, warm your pot with oil or butter, add to pot to sauté until they have color
- To the onion and garlic, add the milk, butter, yogurt, lemon juice, and zest. Stir until smooth and creamy. Mix in parsley and parmesan cheese, allowing the cheese to melt into the sauce.
- In a separate pan, lightly sauté the zucchini strips and cherry tomatoes until tender and slightly caramelized.
- Add the roasted cauliflower, sautéed zucchini, and tomatoes to the mixing bowl with the linguine. Pour the sauce over the top and toss everything together until evenly coated. Garnish with additional parsley and parmesan, if desired. Enjoy!
