Healthy RC Steering Committee Virtual Meeting
Healthy RC Living

Greek Orzo Pasta Salad
Serves 8

1 lb Barilla Orzo pasta (or pasta of your choice)
2 oz extra virgin olive oil
1 cup frozen peas and carrots
½ cup chopped cucumber
½ cup chopped tomato
¼ cup chopped radish
¼ cup green onion chopped
½ cup chopped red bell pepper
½ cup chopped Kalamata olives
2 stick chopped celery
2 tspn chopped fresh oregano (or 1tsp dry)
1 Tbsp chopped fresh parsley
8 oz dressing (recipe follows)
Salt and pepper to taste
Feta Cheese for garnish

  1. Cook pasta aldente according to instruction on box.
  2. Drain pasta with a colander.
  3. Place pasta into a mixing and add the olive oil to prevent it from sticking.
  4. Add frozen peas and carrots and mix to incorporate
  5. Let pasta cool and add the rest of the ingredients, except cheese.
  6. Mix well and refrigerate to serve cold. Garnish with feta cheese before serving.

Note:  This salad can also be served warm. Mix all ingredients together after the pasta is drained and serve immediately or hold for up to 2 hours at room temperature. Refrigerate any leftovers.

Creamy Red Wine Dressing

1 cup labne (or Greek yogurt)
½ cup extra virgin olive oil
½ cup red wine vinegar
2 Tbsp honey
1 Tbsp dry oregano
½ tspn ground black pepper
1 tspn kosher or sea salt

  1. Place all ingredients in a blender and blend on high until smooth.
  2. This dressing can be kept refrigerated for up to 10 days.

  • Turning off lights when leaving the room
  • Unplugging devices not currently in use
  • Turning off the AC/heater and enjoying the fresh outdoor air

RC General Plan Update - Take the Survey!
As most of you are aware, the City is currently working on updating our General Plan, the document that will guide policy and development within our City over the next handful of decades. The City has had a General Plan since its incorporation and we are required by law to update the plan every ten years or so to ensure our city vision incorporates changing trends in the way we live our lives.
There are currently two ways you can use your voice in this General Plan update process. The first is a Visioning Survey that will help us understand what you envision RC looking like in the future. The second is a Mapping Survey that allows you to place icons on a digital map to indicate current strengths and issues within the physical environment of the city.
Both surveys will be available on the City’s General Plan Update webpage,  until May 21st. Please share with your family, friends, and neighbors. We appreciate your time and value your feedback greatly!

You're Invited to the Healthy RC Youth Leaders
End-of-Year Presentations!
Join Healthy RC Youth Leaders for their Virtual End-of-Year Research Presentations on Wednesday, May 20th from 3:30 PM - 5:00 PM. The Healthy RC Youth Leaders program was launched in 2011 to give teens an active, meaningful voice. This is a unique program that provides students with leadership experience and local government knowledge to work on issues that matter to them. 

This year, Youth Leaders have been developing research projects and have been preparing to present their findings. They have conducted surveys and collected data on several issues and have developed potential solutions to implement in the community. Research topic presentations include: Teen Homelessness, Environmental Issues, Vape Shop Buffer Zones, Language Equity in the City of Rancho Cucamonga, and Teen Mental Health.

Kindness Lawn Signs
Get creative and spread some positive energy in your neighborhoods by crafting signs that encourage kindness, compassion, and solidarity using simple lawn signs. Post and tag us on social media using #BeKindRC . Free, blank lawn signs are available for pick-up at City Hall upon request (see details below).

Feeling shy about asking a neighbor if they need help? Try utilizing this friendly Compassionate RC COVID-19 Helper Postcard to reach out to those in need! Simple acts of service such as picking up groceries, sending mail, or even just a friendly phone call can go a long way in making a difference in someone's life, especially during this time! Campeones para la Comunidad Sewing
Home-made Masks for Heroes
“How can we help?” was the first comment Luz Fuentes, a member of  Campeones para la Comunidad , made during our conference call when discussing COVID-19 community concerns. As seniors, all of our Campeones have taken quarantine precautions seriously and have been self-isolating.  

The Campeones decided to take action after hearing the news that there was a shortage of Personal Protective Equipment (PPE), such as masks, for hospital workers and other healthcare providers. They collectively decided to use their sewing skills to make home-made masks for local hospitals and join the thousands of volunteers around the country who are donating their time and resources to the #100MillionMaskChallenge . They are making the masks according to the sewing guidelines specified at . Thoughtful service projects such as these truly go a long way during this time of need!
