Apple & Yogurt Cups
Serves 4


  • 1 ½ plain whole milk yogurt
  • ¼ cup honey
  • 1 Tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 cups chopped apples


  1. Place the yogurt, honey, cinnamon, and vanilla into a bowl and mix well to incorporate.
  2. Add the chopped apples and mix to combine.
  3. Serve cold as dessert or as a snack.
  4. Refrigerate leftovers for up to 2 days.

As the coronavirus crisis continues, parents everywhere are struggling to keep children healthy and occupied. If you’re anxious about how to protect and nurture your kids through this – often juggling work obligations at the same time – you’re in good company. Healthy RC Brings Community Together to Address Racial Equity and Social Justice Issues

On Thursday evening, November 12th, Healthy RC’s Compassionate Community hosted its first ever citywide symposium titled Building a Path to Unity: A Virtual Symposium on Racial Healing, Equity, and Unity. A total of 88 individuals participated in the symposium, many of which represented various sectors including schools, faith-based groups, non-profits, businesses, healthcare, and other community-based organizations. A large number of City residents and City staff also attended the event.

Dr. Gail C. Christopher, an award-winning social change agent recognized for her work around health equity in communities across the country, spoke to the audience specifically about racial equity and the importance of working together to uproot racism itself.  One participant shared “I loved the way…she encouraged me to develop a strong relationship [with] my community for humanity, empathy, and compassion.”

The symposium also provided a safe space for community members to discuss with one another, share their personal experiences with racism, and envision a city where everyone has an equitable chance of thriving and living healthy lives. A participant later remarked “People are in different places in their racial awareness…and more opportunities like this need to take place so that people can become more aware. We have a long way to go, but we have finally truly started.”

Healthy RC’s Compassionate Community Subcommittee will consolidate the community’s feedback to help guide and direct its next steps, particularly as it continues to lead the City’s efforts in engaging with stakeholders to identify community-centered strategies that tackle these critical issues. We hope that you join us in our regular (virtual) subcommittee meetings, typically held every 3rd Tuesday of every month at noon.
