Good Morning. Thanksgiving has passed and the countdown to Christmas is shorter than ever before. The later than usual Thanksgiving has us in a crunch to get all the holiday goodies prepared.


Our aged beef rib racks are on the shelf and looking good. There are only about 74 bones available of the 42 day dry aged beef rib racks; we have many more of the 21 day aged rib racks available.


Beef is always the hardest thing for us to scale. Order your rib rack or tenderloin soon before they are gone; unfortunately, as a whole animal butcher shop we can't just open boxes to get more cuts. We have to cut 700# of beef to extract 2, 3# beef tenderloins.

This order form includes items that are available for multiple pick-up days in December. If you want to order items for pick-up on different days, please fill out 2 order forms -- one for each pick-up date.

SMOKED HOLIDAY HAM

Smoked Holiday Ham

We take pride in our ham. We start with making a brine balanced with salty and sweet, bringing in the malty characteristics of sorghum and the salty brine of sea salt.


Brining a ham is part science. We have to calculate our brine by the weight of the ham and how much we want to inject it.

After we tie the hams, then the fun part. Smoke them. Hams are then smoked for 16 hours for a tender, smoky finish.


Hams are sold by the piece, weighing between 7 and 10 lbs.


Smoked Hams - $8 per lb.


Because we only get 2 hams per hog, our supply of hams is limited. Please reserve your ham now.

GRASSFED BEEF

Black angus, raised on organic pastures at Wholesome Valley Farm for 26 to 30 months. Dry aged a minimum 21 days.



21 DAY DRY AGED BEEF STANDING RIB RACK / PRIME RIB $28 per lb. (aka rib roast)

Each rack is dry aged a minimum of 21 days. A rib rack is 7 bones weighing approximately 15 lbs. Each steer is different, so each rack may vary some in weight. On average we suggest 2 people per bone. So, a 7 bone rack would serve between 10 and 15 guests, depending on what else is being served.


Rib racks are extremely limited, and we sell them only as 3 bone, 4 bone, or full 7 bone roasts. All racks are frenched, cut from the bone, and tied back.


45 DAY DRY AGED RIB RACK / PRIME RIBE $38 per lb. very limited, only 8 sides of beef.


STRIP LOIN ROAST $28 per lb. The rib roll turns into one long, tender muscle, called the strip loin. This is generally the cut used for New York Strip Steak and is the same steak you find on the larger side of a porterhouse. The strip loin roast can be cut to size more easily. It is boneless and a full strip loin weighs approximately 5 to 7 lbs. We suggest 8 oz per guest, so a 5 lb roast would feed 10 people.


Strip loin roasts are very limited. Sold by the half or whole, so approximately 2.5# or 5#.


BEEF TENDERLOIN ROAST $42 per lb. The whole tenderloin varies from 2.5 to 4 lbs, depending on the steer. We suggest no more than 8 oz per person. Sold by the whole tenderloin only. For example, for 6 lbs of tenderloin, please order 2 tenderloins. We trim the tenderloin thoroughly and tie neatly with butcher twine. Tenderloin roasts are limited. Reserve yours now. Sold only by the whole tenderloin.


BONELESS SIRLOIN ROAST $18 per lb. A delicious, lean, and economical offering for the Holiday Feast. The sirloin is the next muscle behind the strip loin, with a bit more tooth than the strip loin but without any fat cap. The sirloin roast is boneless and tied into a neat roast; it cooks easily and is easy to carve. This cut should not be overlooked as a great holiday beef roast.



OCP HOLIDAY RUB EYE OF ROUND or BOTTOM ROUND ROASTS ($9 - 10 per lb) Average eye of round weighs ~2.5#, and bottom round is ~5 lbs.


A great alternative to a strip loin or rib rack is roast beef, and the best cuts are eye of round and the bottom round. For the holiday season, we are offering them with an herbal rub at no additional cost. The roast includes a dry rub of fresh rosemary and thyme, salt, pepper, and garlic. We guarantee your house will smell amazing and your guests will love these beef roasts. Round roasts should be cooked to no more than medium rare to medium and must be carved thin. Cooking instructions available.


BRISKET $9 - 12 per lb. We have saved our finest briskets for the holiday season. Full briskets, flats and points available.


DEMI GLACE. $12 sale price with beef roast. If you had hundreds of pounds per week of beef bones, you may take the time to make 40 gallons of rich stock and reduce it to 5 gallons. We will be stocked up with pint jars (~16 oz) demi glace.

HOLIDAY ORDER FORM
PASTURE RAISED PORK

Pasture raised outside with non-gmo grains, no hormones, or antibiotics. Berkshire and duroc cross bred hogs.


Enhance your pork: With all pork roasts, our homemade fermented kraut is on sale for $10 per quart.


PORK STANDING RIB ROAST $14 per lb. Similar to a beef rib rack, the pork rib roast is often the holiday centerpiece. Average weight is between 9 and 12 lbs.


BONELESS LOIN ROAST $12 per lb. Similar to the Strip Loin roast in beef, the pork loin roast is tender and flavorful. It averages 2 lbs each and we suggest approximately 8 oz per guest.


PORK TENDERLOIN $15 per lb. At just about one pound each, a pork tenderloin can be a quick, easy, and delicious meal for couples or small dinner parties. 1 tenderloin generally serves 2 guests.


CROWN ROAST $14 per lb. The crown jewel of pork roasts. In this presentation you get both loins from a hog tied into a neat crown roast. There is no finer presentation for a pork roast. Crown roasts must be two full loins. Weights vary depending on the hogs, but approximately 15 pounds per crown roast (roast is in front right of the photo above).


COPPA ROAST $10 per lb. Below, on the bottom left is the coppa roast. It is the center cut out of the pork shoulder, part of the boston butt roast. It is essentially an extension of the pork chop up into the neck. This is the cut we use for capicola and coppa crudo. It is well marbled and very flavorful. This is an excellent braising cut for New Years. If you have a sous vide machine, please consider cooking in sous vide, slicing into steaks, and searing off in a hot skillet and glazing with demi-glace.


PORCHETTA $14 per lb. The porchetta is rich. Very rich. Lots of fat, crispy skin, and tender loin meat. The porchetta is the entire pork side - loin and belly - roll cut out, seasoned, and rolled together with the rind on. We make our porchettas with lemon zest, lemon juice, fennel, rosemary, thyme, salt and pepper. They are a crowd pleaser for sure. Cooking instructions will be provided to ensure you the best results. They are sold by the lb, and we estimate 8 oz per guest with 5 lb minimum order as cooking a smaller portion and getting a good presentation is near impossible.

LAMB OFFERINGS

SEASONED LEG OF LAMB $18 per lb. Approx. 6 to 9 lbs each. Seasoned with rosemary, thyme, fennel, salt, pepper & lemon zest. Each leg roast is butterflied open, de-boned and tied back together for a boneless leg.


SEASONED LAMB SADDLE $30 per lb. Approx. 3 to 4 pounds each. Two boneless loins, roll tied together for a perfect cylinder of tender, flavorful lamb meat. Seasoned with rosemary, thyme, fennel, salt, pepper and lemon zest.


SQUARE CUT LAMB SHOULDER $10 per lb. Bone-in lamb shoulder (not seasoned)


LAMB NECK $6 per lb. Approx. 2lbs each. Ideal for braising.


LAMB SHANKS $8.50 per lb. Approx. 12 to 20 ounces each. Ideal for braising.

PASTURE RAISED POULTRY

POULTRY


Turkeys - $5.50 - $6 per lb. Pasture raised on organic pastures at Wholesome Valley Farm. Weights may range from 12 to 25+ lbs.


Whole Ducks - $7.50 per lb. Pasture raised Pekin ducks. These birds range between 6 and 8 lbs (and have more fat covering than other poultry).


Whole Goose - $12.50 per lb. Pasture raised around a pond, enjoying life as a goose. Approx. 8 to 10 lbs. Only 8 geese available. This bird will have more fat than other poultry.


Duck Confit - $10 per leg quarter. Cured with rosemary and thyme and confited in a bath of heritage pork and duck fat. Each leg quarter is ready to roast off for a crisp skin.
