November is a time to take stock of our lives and be thankful for what we have in our lives. It is also a time to raise awareness about a disease that more than 463 million people live with every day-- Diabetes. If you or a loved one has been diagnosed with diabetes, Good Samaritan is here to support and help you manage your symptoms. Diabetes doesn't have to stop you from enjoying life's pleasures. Coming to terms with your diagnosis is a process, but diabetes can be managed. Your diabetes journey involves being emotionally strong and taking charge of your physical and emotional health. It is never simple, but these tips can help you gain the strength and skills you need. Even if you have not received a Diabetes diagnosis, these tips are preventative and can help you stay healthy!
Knowing what you can and cannot eat can be confusing, but it doesn't have to be. It's all about choices- choosing vegetables without added salt, choosing lean meats such as fish and chicken, and avoiding sugary drinks like soda. Seemingly small choices can make a big difference!
Getting regular exercise is an important part of diabetes management. You don't have to run a marathon. Whatever your fitness level, think of ways you can be more active. Little changes, such as taking the stairs instead of the elevator, parking your car farther away from the door when going to the store, or even playing outside with your kids or grandkids. Every extra step can help!
It is not uncommon for patients who are given a diabetes diagnosis to be prescribed medications. Taking medication means following the day-to-day prescribed treatment at the right time, dose and frequency for the require length of time. It also means you are following the treatment plan to help you avoid complications and stay healthy. If you are having any side effects with the medication, or if it is affecting your quality of life, let your primary care provider know.
When you receive a Diabetes diagnosis, it is important to regularly schedule appointments with your primary care provider. Your provider is there to help you! It is important to discuss your experiences, concerns, and ask questions!

Holiday Pumpkin Pie With
Maple-Ginger Crust
Just in time for the holidays!
Pumpkin pie is typically lower in sugar and fat than the other holiday favorite, pecan pie. Plus it gets a nutritional boost from pumpkin puree which is rich in vitamin A. For this diabetes-friendly version, we reduce the sugar by using a Splenda sugar blend in the filling. The low-fat crust is seasoned with a hint of crystallized ginger and maple syrup for an extra-special flavor boost.
Ingredients
  • 1 1/2 cup of Graham Cracker Crumbs
  • 3 tbsp Maple Syrup
  • 1 tsp Canola Oil
  • 1 Egg White
  • 2 Eggs
  • 1 tsp Minced Crystallized Ginger
  • 1 tsp Ground Ginger
  • 1/2 cup Splenda Sugar Blend
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 (15 oz) can Pumpkin Puree (not pumpkin pie filling)
  • 1 tsp Corn Starch
  • 1 (12 oz) can Evaporated Skim Milk
  • 1/2 cup Light Whipped Topping
Directions
  1. Preheat oven to 425°F.
  2. Make the crust: in a bowl, combine the graham cracker crumbs, maple syrup, oil, egg white, crystallized ginger, and 1/2 tsp of the ground ginger. Press into a 9-inch, nonstick pie pan, to form an even crust. Set aside.
  3. In a small bowl, mix together the Splenda, cinnamon, the other 1/2 tsp of ground ginger, cloves, and salt.
  4. In another bowl, beat the eggs and vanilla together. Add in the Spenda mixture and stir to combine.
  5. Add in the pumpkin and stir until the mixture is well blended. Dissolve the corn starch in about 2-3 Tbsp. of the evaporated milk. Add the corn starch mixture and the remaining evaporated milk to the pumpkin mixture, and mix until smooth. The mixture will be thin.
  6. Pour the pumpkin pie filling into the prepared crust. Place the pie on a baking sheet. Bake for 15 minutes at 425°F. Lower the heat to 350°F, and bake an additional 40 minutes, or until the filling is set when a knife inserted comes out clean.
  7. Remove the pie from the oven, and let cool for 2 hours before serving. Cut into 8 wedges. Top each slice with 1 tbsp whipped topping right before serving.
