Lamb Tagine with Dates
What is a tagine?
Tagine, also spelled tajine, is both the Moroccan (Berber) cooking vessel and dish made in it. The dish is a stew made of meats and vegetables and traditionally cooked in a tagine with a conical shaped lid to allow the steam to rise, condense and drip back down to the stew. Tagines are traditionally prepared on top of a clay majmar, but a charcoal grill will work as well. Practically anything can be turned into a tagine dish: meat, chicken, fish, vegetables and some even make it with meat and fruits. Some typical tagine dishes include lamb with dates, lamb with raisins or prunes and almonds, chicken with olives and preserved lemon, chicken with dried apricots, and meatballs (ketfa) with tomatoes and eggs. Each region has their own special  tagine dishes and different ways of preparing it. Tagines are not meant for modern conveniences and may not survive contact with high heat.  When using the stovetop or oven, please use low heat!  Hand wash, no dishwashers, please!

Vegetable Tagine Dish Vegetarian Tagine

Zamouri Spices is hearing more often from our Vegetarian friends, so we thought we'd include a vegetarian recipe to enjoy.  Bon Appetit!  The above tagine is a natural, unglazed large tagine.  View Tagine Here


* 2 sliced onions
* 2 heads of garlic
* 1 potato, peeled and cut into circles
* 2 carrots, peeled and cut into circles
* 1 cup of peas
* 2 tomatoes, cut into circles
* 30 green picholine olives
* 2 hot chili peppers diced
* � cup of chopped cilantro
* � cup of chopped fresh parsley
* salt
* pepper
* 2 tsp Ahtriya Tagine Spice
* olive oil

Heat olive oil in a tagine. Add the onions. Cook for a few minutes, until the onion starts to change color. Add garlic, spices, potatoes, carrots, peas, and chili peppers. Add one cup of water. Cook for 10 minutes on a low flame. Add the tomatoes, olives, parsley, and cilantro. Cook for 10 more minutes and serve!

This dish can also be cooked in the oven: Start the onions on the stove, as above. After they finish cooking, add all the ingredients to the tagine and put in the oven. Cook for 30 minutes on 325-350 � F

REMEMBER!! Tagines are fragile - ALWAYS USE LOW HEAT!!

Lamb Tagine with Prunes & Dates Dish

* 1 - 2 pounds of lamb, cubed
* Around 30 dried prunes
* 6 dates (pitted)
* one big red onion, sliced
* 6 oz  roasted almonds
* one cinnamon stick
* one teaspoon Mrouzia Spice Blend
* one pinch of saffron
* one pinch of salt (or to taste)
* one pinch of pepper (or to taste)

Wash the prunes and put them in about a quart of water. Let them sit. Put cinnamon stick, Mrouzia Spice Blend, saffron, and lamb in your tagine. Cook on medium low flame. Mix for one minute. Add olive oil and onion. Leave for 5 minutes. Add salt and pepper. Take the prunes out of the water and put them aside. Keep the water! Pour it into the tagine with the lamb. Let the meat cook for 1 � hours (or however long it takes to cook) on a low flame. Add the prunes and dates in the last 15 minutes.
