IHN's Holistic Food Preparation in Hong Kong

A unique component of IHN's Applied Holistic Nutrition Program is the Holistic Food Preparation (HFP) course. It's a steep introduction into the vast and delicious knowledge of holistic cooking principles designed to enhance the nutritional value of foods and make them better body-mind fuel. Of all IHN courses in the Diploma Program, HFP is the only one that follows a stand-alone schedule outside of standard class hours. When IHN went Online, the HFP class gave us pause to make sure we delivered it as the hands-on course it was intended to be with LIVE, interactive instruction and classmates to share in the experience.

Katrina Yuen, an Online Pacific Time Zone student was 15 hours ahead of her classmates for the HFP. With each day of class running 6 hours, Katrina would have had to attend from 11pm - 5am her time, in Hong Kong. In order to accommodate Katrina, Candace Bell, one of our popular HFP instructors, coordinated specific times when Katrina could watch recordings of the classes and participate as the lesson moved along. Katrina submitted photos and videos of her preparation techniques so that she could demonstrate her progress and receive feedback from Candace. Katrina sent us two pictures to share. One of the market where she purchased her supplies and another of her kitchen set up with Candace on her laptop and the course notes recipe on her iPad. IHN, our faculty and administration will always find a solution to maintain the integrity, connection to, and joy of the program—anywhere!

Carrots are a root vegetable and come in many colours, including orange, purple, yellow and black. Originallly thought to be cultivated in Peru for it’s aromatic leaves and seeds, rather than it’s root, carrots are now a staple in diets around the world. Once they mature in 4 months, this starchy veg is rich in beta carotene, vitamin C, B6 and K. Carrots can be eaten cooked, raw, or fermented as IHN graduate, Crena Cretu, shows us in her Easy Fermented Carrots recipe.
