Thank You Viviana and Leralyn!

IHN was blessed to have two November 2021 Online Eastern graduating students support us in sharing creative CNP food blogs. They built a delicious cabinet of recipes sourced from our graduates' websites. They crafted educational introductions to the recipes by focusing on their therapeutic ingredients. We have featured one every week, through our public subscriber email, that you are reading right now called, IHN This Week, and through our IHN Weekly Digest, the exclusive outreach to our students and graduates. Thanks to these curious, knowledgeable, and passionate students-now-graduates, we have been able to see what our colleagues have been cooking up!

Viviana Padilla, has a background in advertising and marketing, and lives with her family in Panama City, Panama. After working in this Co-op, she was able to discover interesting recipes for her family to enjoy and to fuel her own health and fitness practice by saving her favourites to share with her clients. She also found CNPs who she'll reach out to when developing her retreats in beautiful Central America.

Leralyn Marty, was born, raised and lives with her family in panoramic Castries, St Lucia. She has a background in biology and chemistry, and has been teaching science for over 15 years. She decided to further her education in the field of nutrition to support her child’s illness. Today, she focuses her practice on skin health and helps women achieve optimal health through the power of healing foods.

Jaimattie Brings Something From Home To IHN

If you ever come to the Toronto campus in the late morning or early afternoon, there's a good chance you'll be greeted by Jaimattie (Jai) Brasse and her bowl of fruit. Along with her daily regimen of vitamins, minerals and antioxidants, she can't resist even more micronutrients, from her oranges and blueberries. Jaimattie's love of these sweet harvests comes from her cultural roots. Originally from Guyana, she grew up where citrus fruit as well as cherries, melons, mangos, and bananas were abundant. There are diets and protocols that limit fruit but for her, snacking on sunlit treats was a practice that wasn't going to end when moving to Canada. Next time you see her ask her about the beautiful fruit farms of Demerara!

Jaimattie is the Student Services Administrator and Liaison at IHN's head office. She is a well-loved and integral member of the close-knit teams at IHN—click and scroll to see Jai's feature from July 12, 2021

We couldn't resist this screen grab of Eva CabacaWhile looking for images of her cooking classes, from recordings of last year's Con Ed course, this moment perfectly demonstrated her intensity around making sure that students are getting things just right. Nothing goes unnoticed, or unsupported, under the watchful eye of this incredible earthly and divine, Master of Education.
Live, Real-Time Instruction Recorded For When You Are Ready

If you want to take one of IHN's Con Ed courses but can't make the date or time, for several or all of the classes, you can learn through the recordings. They are sent out next day before 12:00 pm Eastern. All links to the lessons are live for one month after the course ends. This allows you to keep up with the class and have access to the faculty member. Our Con Ed courses are not pre-recorded, they are updated yearly and taught in real-time. That means that our questions for the faculty member can be answered via email or at the top of the next live class. WhatsApp or Facebook groups are created in order to bring all peers taking the class together.

The only component of the course that needs to be done on the same day as the other students, or proctored by administration at a time that works for you, are the tests and final exam. Our Con Ed courses have been accessed by students all over the world. There is full administrative support. IHN's Con Ed programming invites holistic nutritionists or natural health practitioners from all schools and programs across Canada, the US and the world.

Online grocery shopping has steadily increased. In a February 11, 2022 article (4 minute read) written by Joe Boland, a recent study from Cambridge University found that there is a lack of accurate labeling on food products. “[The] rapid growth in web-based grocery food purchasing has outpaced federal regulatory attention to the online provision of nutrition and allergen information historically required on food products”. This study found that while 64% of nutrition products had accurate labels, allergens were listed only 11.4% of the time. Become more empowered with your shopping habits, particularly with the importance of accurate food labels.

Goat cheese is a dairy product enjoyed around the world for its creamy and distinct flavour. It comes in a variety of textures, from soft and spreadable fresh cheese to salty, crumbly aged cheese. It is also known as chèvre, referring to a cheese made from goat’s milk and is softer and tangier than a cheese made from cow’s milk. Goat cheese is an excellent source of protein, healthy fats, vitamins, and minerals. The fatty acids found in goat’s milk have antibacterial qualities and may help increase satiety with its fat content. We recommend this delicious Spinach, Tomato & Goat Cheese Eggs Cup recipe by IHN graduate Sarah Robinson.
